Greek-Style Summer Table: Lemony Tomato Salad & Charred-Olive Pasta (Shared Meal for Friends)

Hosting a Greek-style shared meal is all about timing: prep the bright lemony tomato salad ahead, then cook the charred-olive pasta skillet right before serving so it stays hot, silky, and ready for everyone to dip in.
Recipe at a glance
- Yield: Serves 8 (about 1 1/2 cups salad + 3 cups pasta per 2-cup portion)
- Prep time: 25 minutes
- Cook time: 20 minutes
- Total time: 45 minutes (plus salad chilling time)
- Chill time: 30 minutes (optional, for best flavor)
Ingredients
Lemony tomato salad (make-ahead)
- 3 cups cherry tomatoes, halved
- 1 cup diced cucumber (about 1 small)
- 1/2 cup diced red onion
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons fresh lemon juice (plus 1–2 teaspoons to taste)
- 1 tablespoon red wine vinegar
- 1 1/2 teaspoons kosher salt, plus more to taste
- 1/2 teaspoon black pepper
- 1/2 cup chopped fresh parsley
- 1/3 cup crumbled feta (optional but great)
Charred-olive pasta skillet
- 1/4 cup extra-virgin olive oil, divided
- 1/2 cup pitted Kalamata olives, chopped (or mixed black olives), drained
- 6 cloves garlic, sliced
- 1 teaspoon dried oregano
- 1/4 to 1/2 teaspoon crushed red pepper flakes (optional)
- 1 pound spaghetti or linguine
- 1 cup reserved pasta water, plus more as needed
- 1/2 cup grated Parmesan (optional) or Pecorino Romano
- 1/2 cup chopped fresh parsley
- Zest of 1 lemon (optional, for extra brightness)
Optional cooked add-ins (choose one)
- Chicken: 2 cups cooked diced chicken
- Seafood: 1 to 1 1/2 pounds shrimp, peeled and cooked through (sautéed or boiled), then chopped
- Meatless: 1 can (15 ounces) chickpeas, drained and warmed
Instructions
- Make the lemony tomato salad. In a large bowl, combine tomatoes, cucumber, and red onion. In a small bowl, whisk olive oil, lemon juice, red wine vinegar, salt, and pepper. Pour over the vegetables and toss until glossy. Stir in parsley and feta (if using). Cover and refrigerate 30 minutes (or up to 24 hours).
- Char the olives for bold flavor. While the salad chills, set a large skillet over medium-high heat. Add 2 tablespoons of olive oil. Add chopped olives and cook 2–3 minutes, stirring occasionally, until they smell toasty and you see browned bits. Add garlic, oregano, and red pepper flakes. Cook 30–45 seconds—just until fragrant. Don’t brown the garlic.
- Cook the pasta to al dente. Bring a large pot of salted water to a boil. Cook spaghetti/linguine until al dente (follow package directions, usually 1–2 minutes less than “tender”). Before draining, reserve at least 1 cup of pasta water.
- Toss pasta into the skillet. Add drained pasta directly to the skillet. Toss with the olive mixture, adding reserved pasta water a splash at a time, until the sauce clings and looks glossy. This should take 1–2 minutes.
- Finish and serve hot. Turn off the heat. Stir in Parmesan/Pecorino (if using), chopped parsley, and lemon zest (if using). Taste and adjust salt and lemon juice. If adding add-ins, stir them in after the pasta is tossed—warm through and coat.
Texture/doneness cues
- Pasta: should feel firm in the center (al dente), not mushy.
- Garlic: fragrant and lightly golden at most—if it smells bitter, it’s overcooked.
- Sauce: looks slightly thick and shiny; loosen with pasta water until it coats the noodles.
- Tomatoes: salad should still hold shape after chilling, but with plenty of lemony juices.
Tips (for a smooth shared table)
- Timing: refrigerate the salad first, then do the pasta skillet 15–20 minutes before you want to eat.
- Keep pasta glossy: under-sauce slightly; it tightens as it sits. Refresh with a splash of pasta water right before serving.
- Salt in layers: olives are salty—start tasting before adding extra salt.
Serving ideas
- Set out the salad in a big bowl and the pasta in a warm serving dish with tongs/spoon.
- Add a platter of grilled or roasted vegetables, warm pita, or cucumber slices for crunch.
- Great pairings: chilled white wine, sparkling water with lemon, or a simple rosé.
Storage notes
- Salad: refrigerate in an airtight container up to 24 hours. Stir again before serving to redistribute juices.
- Pasta: cool to room temperature (about 1 hour), then refrigerate in a sealed container up to 3 days.
- Reheating: reheat pasta gently on the stovetop with a splash of water or broth, stirring until steaming hot. Microwave works too, but stir halfway for best texture.
- Safety: follow safe leftovers handling practices—refrigerate promptly and reheat until hot throughout.
Variation: For a brinier, more “Mediterranean” feel, use a mix of olives (Kalamata + Castelvetrano) and add 1 tablespoon capers, drained, to the skillet during the last minute.
