Recipe at a glance

  • Yield: 12 rolls
  • Prep time: 25 minutes
  • Bake time: 15–20 minutes
  • Chill/Rest time: 0 minutes (with optional overnight option below)
  • Total time: about 2 hours 45 minutes (including rises)

Ingredients

  • 1/4 cup (50 g) warm water (about 105°F–115°F / 40°C–46°C)
  • 2 1/4 teaspoons (7 g) active dry yeast
  • 2 tablespoons (25 g) sugar
  • 1 cup (240 g) warm milk (about 105°F–115°F / 40°C–46°C)
  • 2 large eggs, room temperature, beaten
  • 4 cups (500 g) bread flour (or all-purpose flour)
  • 1 1/2 teaspoons (9 g) salt
  • 1/4 cup (57 g) unsalted butter, melted (plus more for brushing, optional)

Optional (recommended):

  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Flaky salt for finishing (a pinch or two)

Instructions

  1. Activate the yeast. In a large bowl, stir warm water, yeast, and sugar together. Let stand 5–8 minutes until foamy.
  2. Mix the dough. Whisk warm milk and eggs into the yeast mixture. Add bread flour and salt. Stir until a shaggy dough forms, then stir in melted butter.
  3. Knead until smooth. Knead by hand on a lightly floured surface for 8–10 minutes, or in a stand mixer fitted with a dough hook for 6–8 minutes. The dough should be smooth, elastic, and slightly tacky (not sticky like batter).
  4. First rise. Place dough in a lightly greased bowl, cover, and let rise until noticeably puffy and roughly doubled in size, 45–60 minutes at warm room temperature. Rise cue: when you press two fingers gently into the dough, the indentation should slowly spring back, leaving a dent.
  5. Shape the rolls. Line a baking sheet with parchment. Turn dough out, gently deflate, and divide into 12 equal pieces. Roll each piece into a smooth ball by tucking the edges underneath.
  6. Second rise. Arrange rolls with a little space between them. Cover and let rise 25–35 minutes, until they look puffy and feel light. Rise cue: the balls should jiggle slightly when you nudge the pan and the dough should spring back slowly when lightly pressed.
  7. Prep for baking. Heat oven to 375°F (190°C). Brush rolls with egg wash. If you’re using flaky salt, add a tiny pinch to the tops.
  8. Bake. Bake 15–20 minutes, until the tops are deep golden brown and the rolls sound hollow when tapped on the bottom.
  9. Cool. Cool on the pan 5 minutes, then transfer to a rack. Let cool at least 10 minutes before slicing or serving so the crumb sets.

Doneness (optional thermometer guidance): If you use a thermometer, the center should read around 190°F–200°F (88°C–93°C) for fully baked, tender yeast rolls.

Tips

  • For extra-soft tops: After baking, brush warm rolls lightly with melted butter.
  • Switching flours: Bread flour gives the best chew and structure, but all-purpose works too—just knead a little until smooth.
  • Overnight option: After shaping, cover and refrigerate up to 8–12 hours. Let them sit at room temperature 30–45 minutes to puff before baking.
  • Simple substitution: If you only have instant yeast, use the same amount and skip the foam step—mix everything and proceed.

Serving ideas

  • Classic breakfast: Serve warm with butter and strawberry jam (or apple butter).
  • Honey-butter moment: Mix softened butter with honey and a pinch of flaky salt; spread while rolls are warm.
  • Breakfast sandwich: Split rolls, toast lightly, then fill with scrambled eggs and cheese, plus a slice of tomato or a quick sautéed spinach.

Storage notes

  • Room temperature: Store in a sealed container for up to 2 days.
  • Reheat: Warm in a 300°F (150°C) oven for 5–8 minutes to refresh the crust.
  • Freezing: Freeze baked rolls once completely cool. Place in a freezer bag and freeze up to 2 months.
  • Thaw/reheat: Thaw at room temperature or rewarm from frozen in a 300°F (150°C) oven until hot (about 10–15 minutes depending on size).
