- 4 bone-in, skin-on chicken thighs (about 1 1/2–2 lb total)
- 1 1/2 teaspoons kosher salt, divided
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 lemon, cut into wedges
- 4 sprigs fresh thyme (or 1 teaspoon dried)
Garlic mashed potatoes
- 2 lb Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 1 tablespoon kosher salt (for boiling)
- 4 tablespoons unsalted butter
- 4–6 cloves garlic, minced
- 1 cup whole milk (warm)
- 1/2 cup sour cream (or plain Greek yogurt)
- 1/2 teaspoon black pepper
- Optional: 1/4 cup finely chopped chives
Bright bistro salad + vinaigrette
- 8 cups mixed leafy greens (arugula, romaine, or spring mix)
- 1 cup cherry tomatoes, halved
- 1/2 red bell pepper, thinly sliced
- 1/3 cup crumbled feta (optional)
- 2 tablespoons toasted sliced almonds (optional)
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar (or champagne vinegar)
- 1 teaspoon Dijon mustard
- 1 small garlic clove, grated
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Optional: 1 teaspoon honey
Instructions
- Heat the oven and season the chicken. Heat oven to 425°F. Pat chicken thighs dry. Season all over with 1 1/2 teaspoons salt, pepper, and garlic powder. Drizzle with olive oil and rub to coat.
- Roast. Place chicken on a sheet pan (use a rack if you have one for extra crispness). Nestle lemon wedges and thyme around the chicken. Roast 45–55 minutes, until the thickest part registers 165°F on a food thermometer and the skin is deep golden and crisp.
- Rest. Transfer chicken to a plate and rest for 10 minutes. (Juices settle and the temperature holds as it finishes.)
- Boil the potatoes. While chicken roasts, add potatoes to a large pot and cover with cold water by 1 inch. Add 1 tablespoon salt. Bring to a boil and cook until very tender, about 15–20 minutes. Drain well.
- Make the mashed potatoes. Return potatoes to the warm pot. Add butter and minced garlic; cook 30–60 seconds just to mellow the garlic flavor. Mash until mostly smooth. Gradually beat in warm milk and sour cream until fluffy. Season with pepper (and chives if using). If needed, loosen with a splash more milk.
- Mix the vinaigrette. Whisk olive oil, vinegar, Dijon, grated garlic, salt, and pepper (and honey if using) until emulsified.
- Compose the salad. In a large bowl, toss greens with just enough vinaigrette to lightly coat. Add tomatoes and red pepper. Taste and adjust with a touch more salt or vinegar if you like.
- Serve. Spoon garlic mashed potatoes onto plates. Top with chicken. Spoon any lemony pan juices over the chicken (not onto the salad). Finish with the composed salad on the side.
Texture & doneness cues
- Chicken: Use a thermometer—look for 165°F in the thickest part, plus crisp, golden skin.
- Mashed potatoes: They should feel creamy and fluffy, not gummy. Warm milk helps them stay smooth.
- Salad: Toss and dress right before serving so greens stay crisp.
Tips & easy variations
- Switch the cut: Bone-in, skin-on chicken breasts work too—start checking at about 30–40 minutes (time varies by thickness).
- More French-bistro vibes: Add a teaspoon of capers to the vinaigrette, or swap feta for shaved Parmigiano-Reggiano.
- Make it kid-friendly: Serve salad dressing on the side and keep greens chopped smaller.
Serving ideas
- Serve with crusty bread and butter for scooping mashed potatoes and pan juices.
- Pair with a simple white wine or sparkling water with lemon.
Storage notes (and reheating)
- Refrigerate promptly: Let leftovers cool for about 1 hour, then refrigerate within 2 hours. Cooked poultry leftovers keep in the refrigerator for 3–4 days.
- Store separately: Keep chicken, mashed potatoes, and salad components separate to avoid soggy greens.
- Reheat safely: Reheat chicken until piping hot throughout, reaching at least 165°F on a thermometer. Mashed potatoes reheat best in short bursts with a splash of milk.
- Salad: Best fresh. If you have leftover dressed salad, refrigerate and eat within 1 day.
