Skewers (choose a protein)

Use 1 to 1 1/2 pounds total, cut into 1 to 1 1/4-inch pieces.

Optional: crispy pita/flatbread bites

  • 1 pita or 6 to 8 ounces flatbread, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon za’atar (or oregano) (optional)

Optional: sauced “meatball-style” bites

  • 1 pound frozen meatballs (or homemade), any flavor
  • 1/2 to 3/4 cup tomato-red dipping sauce (from above)
  • Chopped herbs or sliced pickled jalapeños/chiles (optional)

Instructions

  1. Make the sauce (can be done ahead): In a small saucepan, warm olive oil over medium heat. Add onion and cook 4 to 5 minutes until softened. Stir in garlic and tomato paste for 30 seconds. Add crushed tomatoes, vinegar, honey (if using), salt, pepper, and red pepper flakes (if using). Simmer 8 to 10 minutes, stirring, until slightly thickened. Stir in herbs if using. Texture cue: spoon should coat the back of a spoon. If too thick, loosen with 1 to 2 tablespoons water. If too thin, simmer 2 to 3 minutes more. Let cool; for best flavor, chill 20 minutes.
  2. Start the rice: If using already cooked rice, move to step 3. If cooking from dry, cook 1 cup dry long-grain rice according to package directions; fluff with a fork when done.
  3. Herbed yellow rice: Heat olive oil in a skillet over medium heat. Add diced onion and cook 4 to 5 minutes until translucent. Stir in garlic, turmeric, cumin, salt, and pepper; cook 30 seconds. Add cooked rice and toss gently to coat. Stir in parsley/cilantro and lemon juice. If the rice seems dry, add warm water or broth 1 tablespoon at a time until it’s fluffy and lightly saucy (not wet).
  4. Build skewers: If using wooden skewers, soak in water 20 to 30 minutes. Cut your chosen protein into 1 to 1 1/4-inch pieces. Toss protein with olive oil, salt, paprika, coriander, pepper, lemon juice, and yogurt (if using). Thread pieces onto skewers alternating with bell pepper and onion chunks.   7. Optional: crisp pita/flatbread bites: Heat oven to 400°F (205°C). Toss bread pieces with olive oil, salt, and za’atar/oregano (if using). Spread in a single layer on a sheet pan and bake 8 to 12 minutes, flipping once, until crisp and lightly browned. Keep warm and serve soon for the best crunch.
  8. Optional: warm sauced bites/meatballs: Warm meatballs in a skillet or microwave until hot. Stir in enough tomato-red sauce to coat—start with 1/2 cup and add more if you want them saucier. Heat through.
  9. Serve as a platter: Spoon herbed yellow rice onto plates or a large platter. Arrange skewers on top and pass the tomato-red dipping sauce in small bowls. Serve crispy pita/flatbread bites on the side, plus a bowl of sauced bites for dipping.

Tips

  • Make-ahead friendly: The sauce keeps well and gets better after chilling. Rice can also be cooked earlier and reheated gently with a splash of broth.
