Ingredients

Base pasta + white sauce

  • 12 ounces pasta (penne, rigatoni, or any short pasta)
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter (or use olive oil for a dairy-light version)
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk (or 2% milk)
  • 1/2 cup grated Parmesan (plus more for serving)
  • 1/2 teaspoon kosher salt, plus more for pasta water
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional, but nice with white sauce)
  • 1/2 to 1 cup reserved pasta water (as needed to loosen sauce)

Herb topping

  • 1 cup chopped fresh herbs (a mix works great: parsley, basil, dill, or a little mint)
  • 1 tablespoon lemon zest (optional)
  • 1 tablespoon lemon juice (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Optional Mediterranean add-ins (choose 1–2)

  • 1 cup roasted vegetables (zucchini, peppers, or eggplant), chopped
  • 1/2 cup sliced olives
  • 1 cup chickpeas, rinsed and drained (lightly warmed)
  • 2 cups baby spinach (stir in at the end until just wilted)
  • 1 1/2 cups cooked chicken, shrimp, or white fish (stir in to warm through)

Instructions

  1. Boil the pasta. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente (tender with a slight bite). Before draining, reserve at least 1 cup pasta water.
  2. Start the base. While pasta cooks, heat olive oil and butter in a large skillet over medium heat. Once the butter melts, sprinkle in flour and whisk for 1 minute to cook out the raw flour taste.
  3. Make the white sauce. Slowly pour in milk while whisking to keep it smooth. Bring to a gentle simmer and cook 4–6 minutes, whisking often, until the sauce thickens enough to coat the back of a spoon (a “nappe” style consistency).
  4. Season and finish. Stir in Parmesan, salt, pepper, and nutmeg (if using). Taste and adjust. If the sauce is too thick, whisk in a splash of reserved pasta water until it flows easily and still clings.
  5. Combine. Add drained pasta to the skillet and toss to coat. Add reserved pasta water as needed until the pasta looks glossy and saucy rather than dry.
  6. Add your Mediterranean mix-ins. Stir in your chosen add-ins. Warm until everything is heated through and the vegetables (or proteins) are tender, not mushy.
  7. Top with herbs. Turn off the heat. Stir half the chopped herbs into the pasta for flavor, then pile the remaining herbs on top. Finish with lemon zest/juice and red pepper flakes if you like.

Texture cues to aim for: The pasta should still have a slight bite (not soft all the way through), and the sauce should look creamy and cohesive—clinging to pasta—rather than greasy or watery. If it seems thick as it sits, loosen with a few tablespoons of hot reserved pasta water.

Tips, variations & swaps

  • Make it “dairy-light.” Use olive oil instead of butter and swap Parmesan for a similar salty hard cheese (or a small amount of nutritional yeast). You may need a little extra milk to keep the sauce silky.
  • Veg-forward shortcut. Use a jarred roasted vegetable mix or frozen artichoke hearts/peas—warm them in the sauce for the last minute.
  • Extra-bright version. Add a tablespoon of lemon juice right before serving to lift the whole bowl.
