Mediterranean Mezze Platter: Herbed Salad, Roasted Veggies, and Lemon-Garlic Dip

A vibrant Mediterranean meal displaying a variety of traditional dishes and fresh ingredients on a sunlit table.

Think of this as your “everyone gets something” Mediterranean spread: a chopped herb salad for crunch, a hot tray of roasted vegetables for caramelized edges, and a cool lemon-garlic dip for scooping and drizzling. Optional quick grilled bite skewers make it feel extra special without turning the kitchen into a production line.

  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: cherry tomatoes and/or onion chunks for alternating on skewers

Instructions

Make the chopped herb salad

  1. Dice and chop: In a large bowl, combine cucumber, tomatoes, and red onion. Stir in parsley and mint.
  2. Dress: Drizzle with lemon juice and olive oil. Add salt and pepper. Toss well.
  3. Set aside: Let sit 10 minutes while you roast vegetables (or refrigerate up to 24 hours; see storage notes).
  4. Finish: If using feta, crumble it in right before serving so it stays creamy and doesn’t weep.

Roast the vegetables (caramelized + char edges)

  1. Heat the oven: Preheat to 450°F. Line a rimmed sheet pan with foil and lightly oil it.
  2. Season: Toss peppers, onion, zucchini, and eggplant with olive oil, salt, cumin, smoked paprika, and black pepper until evenly coated.
  3. Roast: Spread in a single layer (work in two pans if crowded). Roast 25–35 minutes, stirring once, until vegetables are browned at the edges and tender.
  4. Texture cue: Eggplant should look silky; peppers should have slightly collapsed, char-kissed spots; zucchini should be golden, not mushy.
  5. Finish: Toss with parsley/oregano while hot. Cool 5–10 minutes so steam doesn’t wilt salad.

Mix and chill the lemon-garlic dip

  1. Combine: In a bowl, whisk yogurt (and mayonnaise if using) with lemon juice, zest, olive oil, garlic, cumin, salt, and pepper.
  2. Tune the thickness: For a thicker scoopable dip, add a spoonful more yogurt. For a drizzle-able texture, stir in 1–2 teaspoons water at a time.
  3. Chill: Cover and refrigerate 30 minutes so flavors meld.
  4. Top: Spoon into a serving bowl, drizzle with olive oil, and sprinkle with za’atar or sumac if you like.

Optional: Make grilled skewer-style bites

  1. Cut and marinate: Cut chicken (or lamb) into 1-inch chunks. Toss with olive oil, lemon juice, oregano, salt, and pepper. Marinate while the oven roasts (10–20 minutes).
  2. Skewer: Thread onto skewers (and alternate with cherry tomatoes/onion chunks if using).
  3. Grill or broil: Grill over medium-high heat, turning occasionally, 10–15 minutes, until cooked through (or broil on a foil-lined tray, turning once, until done).
  4. Doneness cues: Chicken should be opaque with clear juices; use a thermometer if you have one. Lamb should be browned outside and tender to bite.
  5. Rest and serve: Rest 5 minutes, then arrange warm on the platter.

Assemble the mezze platter

  1. Start with greens: If you’re adding a leafy pile (arugula, romaine, or mixed greens), place it around one edge so it doubles as a “fork-free” scoop zone.
  2. Add the dip: Spoon dip into the center or one corner bowl. Drizzle with olive oil and finish with za’atar/sumac.
  3. Build the colorful lanes: Add roasted vegetables on one side, chopped salad on the other, then layer in skewers (if using).
  4. Serve with scoops: Pita wedges, warm naan, pita chips, or crunchy vegetables (carrots/celery) work great.

Warm tips (so hosting stays easy)

  • Don’t overcrowd the roast: Crowding steams vegetables instead of browning them.
  • Keep salad crisp: Slice/dice as close to serving as you can, and add feta at the end.
  • Dip holds well: It thickens as it chills—great for make-ahead platters.

Serving ideas

  • Build-your-own plates: Let guests scoop dip with pita, then top with roasted veggies or salad.
  • Drizzle finish: A little extra lemon juice over the chopped salad makes it pop right before serving.
  • Optional tomato garnish: Halved cherry tomatoes with a pinch of salt and olive oil add a bright, fresh finish.

Storage notes (and safe hosting basics)

  • Refrigerate promptly: Keep the dip, salad, and any roasted vegetables with cut produce chilled if they’ll be stored—refrigerate within a couple of hours.
  • Leftovers: Store salad and dip in airtight containers in the fridge up to 3–4 days. Roasted vegetables keep up to 4 days.
  • Rewarm: Gently reheat roasted vegetables in a 400°F oven for 8–12 minutes so they regain their edges.
  • Food-safety for mezze spreads: Use cold holding for chilled items and keep hot items hot. If you’re serving for a while, manage the “in the danger zone” time by replenishing from the fridge and keeping serving dishes smaller—CDC’s food safety guidance emphasizes limiting time for perishable foods at unsafe temperatures.

Variation / substitution

  • Make it dairy-free: Swap Greek yogurt for a thick unsweetened plant-based yogurt (choose one that’s thick). The texture may be slightly less tangy, but it still works beautifully for scooping.
  • Swap the protein: If you want seafood skewers, use shrimp and cook just until pink and opaque (overcooking makes them tough).

Note: For produce and fresh herbs, rinse under cool running water and wash hands/surfaces before and after prep. USDA FSIS guidance covers simple steps to help keep fresh produce preparation safe.
