Coffee-Optional Strawberry Layer Cake with Strawberry Cream Filling

This strawberry layer cake is built for maximum berry flavor without feeling fussy: bake tender vanilla-style cake layers, reduce fresh strawberries into a thick, spoonable filling, then fold that strawberry tang into a light, creamy frosting. Serve it with coffee or espresso if you’d like—or just enjoy the cake on its own.

- 1/2 cup (115 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- 2 tsp vanilla extract
- 1/4 cup (60 ml) sour cream (or plain yogurt)
- 1/2 cup strawberry filling (from above), cooled to room temperature (about 6–8 tbsp)
- Pinch of salt
Garnish (optional)
- 1 cup fresh strawberries, sliced
- 2 tbsp sugar (optional, for quick maceration)
- Fresh mint leaves (optional)
Instructions
- Prep and preheat. Heat oven to 350°F (175°C). Grease two 8-inch (20 cm) round cake pans and line the bottoms with parchment.
- Make the cake batter. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, melted butter, eggs, vanilla, and lemon juice. Pour wet into dry and mix just until smooth.
- Bake. Divide batter between pans. Bake 25–30 minutes, until tops spring back when lightly touched and a toothpick comes out with a few moist crumbs (not wet batter).
- Cool completely. Cool cakes in pans 10 minutes, then turn out onto a rack. Cool fully before filling and frosting (warm cake will melt frosting).
- Cook the strawberry filling. In a saucepan, combine chopped strawberries, sugar, and lemon juice. Cook over medium heat until juicy and bubbling, about 8–10 minutes. Stir cornstarch and cold water, then pour in while stirring. Simmer 3–5 minutes until thick and jammy. Stir in butter. Let cool to room temperature (important for clean assembly).
- Make the frosting. In a mixing bowl, beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix on low until combined. Beat in vanilla, sour cream, a pinch of salt, and about 1/2 cup of cooled strawberry filling. Mix just until creamy and spreadable—avoid overmixing so it stays thick.
- Assemble. If cakes domed, level by shaving a thin layer off the tops. Place one layer on a serving plate or cake board. Spread frosting into a ring about 1/4-inch thick around the edge (this helps hold in filling). Spoon about half the strawberry filling in the center. Add the second layer, then frost the top and sides with the remaining frosting. If needed, chill 15 minutes to firm up between smoothing passes.
- Chill. Refrigerate at least 3 hours (overnight is even better) so the layers set and slices stay neat.
- Garnish and serve. Right before serving, slice fresh strawberries and pile them on top. If you like, toss slices with a little sugar and let sit 10 minutes to get extra juicy.
Tips
- Pan size matters: This recipe is developed for 8-inch round pans. If using 9-inch pans, expect shorter bake time and slightly thinner layers.
- Filling consistency check: It should look like thick jam—able to mound slightly on a spoon. If it’s runny, simmer 1–2 minutes longer.
- Keep frosting stable: Room-temperature cream cheese and butter blend smoothly. If your kitchen is warm, chill the frosting 10–15 minutes before spreading.
- Flavor boost without complexity: Lemon juice in the cake and filling helps strawberries taste more vivid.
Serving ideas (coffee-optional)
- Coffee pairing: Serve with a mild roast brewed coffee or a cappuccino/latte. The creamy frosting plays nicely with milk coffee, while the strawberry brightness complements lighter roasts.
- No-coffee version: Pair with iced tea, sparkling lemonade, or plain milk for a kid-friendly spread.
Storage notes
- Refrigerate: Store covered in the fridge for up to 4 days. Because the frosting is dairy-based, keep it chilled.
- Bring to ideal texture: For best flavor, let slices sit at cool room temperature 15–20 minutes before serving.
- Freezing: You can freeze unfrosted cake layers wrapped well for up to 2 months. Thaw overnight in the fridge, then assemble with fresh filling and frosting for the best texture.
Variation idea: Swap the cooked filling for high-quality strawberry preserves in a pinch. Warm preserves slightly, then thicken with a small cornstarch slurry (use sparingly) until jammy, and let cool completely before layering.
