  • 1 packed cup fresh parsley leaves
  • 1/2 packed cup fresh cilantro leaves (or more parsley)
  • 1 medium garlic clove
  • 1/4 cup extra-virgin olive oil, plus more as needed
  • 2 tablespoons lemon juice (or lime juice)
  • 1 teaspoon Dijon mustard (optional, for stability)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 cup water (as needed for blending to a spoonable texture)

Instructions

  1. Prep the pearl onions. Peel pearl onions. Trim off root ends but keep the onions intact. If they’re larger than bite size, slice each in half lengthwise so every piece pickles evenly.
  2. Score for quicker, even pickling (optional). For extra bite-size feel, lightly score a shallow X on the rounded side of each onion (without cutting through).
  3. Heat the pickling brine. In a small saucepan, combine the white vinegar, apple cider vinegar, water, sugar, salt, bay leaf, and peppercorns. Heat just until the sugar and salt dissolve. Keep it hot (not at a rolling boil).
  4. Pack and pickle. Place onions in a clean pint jar (or two small jars). Add optional herbs and red pepper flakes if using. Pour in hot brine until onions are fully submerged. Cover and let cool at room temperature for about 30–45 minutes.

  7. Adjust. Taste and adjust salt and lemon juice. For a thicker sauce, blend a bit less water; for a looser sauce, add a little more.
