Seafood Paella with Mussels and Shrimp (One-Pan Weekend Dinner)

Ingredients

- 2 1/2 to 3 1/2 cups hot seafood stock or chicken stock (see Step 4)

- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground saffron (optional) or 1/2 teaspoon turmeric (color boost)
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- To finish
- 1/2 cup fresh parsley, chopped
- 1 lemon, cut into wedges
- Optional: 1 tablespoon chopped fresh chives or additional herbs
Instructions
- Start with the mussels. Keep mussels cold until cooking. Scrub shells well and discard any that are cracked. If any mussels have open shells before cooking, tap them lightly: they should close. (If they don’t close after a tap, discard.)
- Sauté the base. In a wide paella pan or large skillet (about 14–16 inches) with a tight-fitting lid, heat olive oil over medium heat. Add onion and bell pepper and cook until softened, 5–7 minutes. Stir in garlic and cook 30 seconds.
- Build flavor. Add smoked paprika, oregano, saffron (or turmeric), salt, pepper, and red pepper flakes (if using). Stir for 30 seconds. Add drained diced tomatoes and cook 2 minutes.
- Toast the rice and simmer with hot stock. Add rice and stir to coat the grains in the tomato-onion mixture. Cook 1–2 minutes. Pour in 2 1/2 cups hot stock and bring to a lively simmer. Taste and adjust salt if needed. Reduce heat to medium-low so it stays at a steady simmer. Add additional hot stock as needed to keep the rice cooking steadily (up to 3 1/2 cups total), typically 35–40 minutes.
Doneness cue: Rice should be tender but not mushy, with the liquid mostly absorbed. You may still see a little moisture near the edges. - Add mussels. Nestle mussels into the rice, pushing them slightly into the surface. Cover and cook until mussels open, 8–10 minutes. Remove lid and let excess steam cook off for 2 minutes.
Doneness & safety cue: All mussels should open during cooking. Discard any that remain closed after cooking. - Finish with shrimp. Arrange shrimp on top of the rice. Cook uncovered until shrimp are opaque and firm, 5–7 minutes. Do not overcook.
Doneness cue: Shrimp should be fully opaque throughout with a gentle “bounce” when pressed. - Rest, then serve. Turn off heat and rest paella, covered loosely with a lid or foil, for 5 minutes. Scatter parsley over the top and serve with lemon wedges.
Tips & easy swaps
- Keep stock hot. When you add hot stock, the simmer stays even, helping the rice cook uniformly.
- Swap seafood mix. If you can’t find mussels, use 1 lb calamari rings plus an extra 1/2 lb shrimp, and add the calamari at the same time you add shrimp (it cooks quickly). Or add bay scallops in the last 2–3 minutes.
- Shortcut for paella rice. Bomba-style is ideal, but short-grain rice works well for home paella. Avoid long-grain rice; it won’t release starch the same way.
Serving ideas
- Serve with a simple salad (arugula, cucumber, and a lemony vinaigrette) and crusty bread to scoop up the flavorful rice.
- For drinks, a crisp dry white wine (or a dry sparkling wine) pairs nicely with seafood and lemon.
Storage notes
- Cool quickly: Let the paella cool at room temperature no more than 1–2 hours, then refrigerate promptly in shallow containers.
- Fridge: Store leftovers for up to 2 days.
- Reheat: Warm in a skillet over medium heat with a splash of stock or water (2–4 tablespoons) to loosen the rice. Heat until steaming hot.
- Freezing: Not recommended—seafood texture can suffer and rice can get grainy on thawing.
