Vegetable Fried Rice with Soft-Boiled Eggs


Ingredients:

For the Fried Rice:

  • 2 cups cooked jasmine rice, preferably day-old
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup cabbage, chopped
  • 1 zucchini, diced
  • 1 cup leeks, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

For the Soft-Boiled Eggs:

  • 4 large eggs

Instructions:

1. Preparing the Soft-Boiled Eggs:

  1. Bring a pot of water to a gentle boil.
  2. Carefully add the eggs to the boiling water using a spoon.
  3. Boil the eggs for 6-7 minutes for a soft-boiled texture with a runny yolk.
  4. Remove the eggs from the boiling water and place them in an ice bath to cool. Once cooled, peel the eggs and set aside.

2. Cooking the Fried Rice:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and diced onion, sautéing until fragrant and the onion is translucent.
  3. Add the chopped cabbage, diced zucchini, and sliced leeks. Cook for about 5-7 minutes, or until the vegetables are tender.
  4. Add the cooked jasmine rice to the skillet, breaking up any clumps with a spatula. Stir-fry for about 3-4 minutes until the rice is heated through.
  5. Stir in the soy sauce and oyster sauce, mixing well to coat the rice and vegetables evenly.
  6. Season with salt and pepper to taste.

3. Assembling the Dish:

  1. Divide the vegetable fried rice onto serving plates.
  2. Slice the soft-boiled eggs in half and place them on top of the rice.
  3. Garnish with fresh parsley.

4. Serving:

  1. Serve immediately while the rice is still hot.

5. Storing:

  1. Refrigeration: Store any leftover fried rice and eggs in separate airtight containers in the refrigerator for up to 3 days.
  2. Reheating: Reheat the fried rice in a skillet over medium heat until warmed through. The eggs can be reheated by placing them in a bowl of hot water for a few minutes.
