Salmon Sandwich with Fresh Onions and Greens

This salmon sandwich is all about contrast: a creamy-but-light lemony salmon filling, crisp red onion crunch, and fresh leafy greens. Optional quick-pickled onions mellow the bite if you want a gentler flavor.
Recipe at a glance
- Yield: 4 sandwiches
- Prep time: 15 minutes
- Quick-pickle time: 20 minutes (optional)
- Cook time: 0 minutes (no-cook sandwich)
- Total time: 20 minutes + optional 20 minutes pickling
Ingredients
- Sandwich base
- 4 sandwich rolls or sturdy hamburger buns, split
- 4 to 6 cups mixed leafy greens (lettuce, arugula, or baby spinach), washed and thoroughly dried
- 1/2 small red onion, thinly sliced (about 1 cup)
- Salmon filling
- 1 (15-ounce) can salmon, drained well, or 2 cups cooked salmon flakes
- 1/3 cup plain Greek yogurt (or mayonnaise)
- 1 to 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice (plus lemon zest, optional)
- 1 tablespoon chopped fresh dill or 1 teaspoon dried dill (optional)
- 1 tablespoon chopped parsley (optional)
- 1/2 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon black pepper
- Optional quick-pickled onions
- 1/2 small red onion, thinly sliced
- 1/4 cup white vinegar or apple cider vinegar
- 2 tablespoons sugar
- 1/4 teaspoon kosher salt
- 2 tablespoons water
Instructions
- Make the salmon filling. In a medium bowl, flake the salmon with a fork until you have a mix of small and medium pieces. Stir in Greek yogurt (or mayo), Dijon, lemon juice (and zest if using), dill, parsley, salt, and pepper. Mix until creamy and spreadable. Texture cue: it should hold together like a thick spread, not be watery.
- Quick-pickle the onions (optional). In a bowl, combine vinegar, sugar, salt, and water. Add sliced onions and toss to coat. Let sit 20 minutes, then drain (or spoon on with a little liquid if you like). Texture cue: onions should still be crisp, just slightly mellow.
- Prep the greens. Line up your greens and make sure they’re dry. Moisture can make bread soggy.
- Assemble. Spread a generous layer of salmon filling on the cut sides of the rolls. Layer on greens and red onion slices (fresh or quick-pickled). Top with the other bun half.
- Texture check. If the sandwich feels too soft, add a little more onion for crunch and keep greens on top right before serving. If it feels too sharp, use quick-pickled onions or reduce how much fresh onion you add.
Tips
- Switch up the crunch: thin-sliced cucumbers or shaved fennel are great with the same lemony salmon filling.
- Use leftover salmon: if your salmon is already cooked, flake it and mix with the spread ingredients the same way. Keep it refrigerated if it’s been stored.
- Dill variation: no dill? Try chopped chives or omit and add an extra teaspoon of lemon zest.
Serving ideas
- Keep it simple: serve with kettle chips or roasted potato wedges.
- Bright side salad: a quick cucumber-tomato salad with a squeeze of lemon complements the sandwich.
- Weeknight option: serve with sliced fruit (berries or melon) for an easy, kid-friendly plate.
Storage notes
- Best approach for leftovers: store components separately when possible—salmon filling in an airtight container, onions in another container, and greens wrapped or paper-towel lined to absorb moisture.
- Refrigerator: refrigerate salmon filling promptly and keep sandwiches (or components) covered. Use within 2 days for best texture.
- Re-crisping: if onions soften, refresh with a few minutes of extra quick-pickling liquid or simply add fresh onion slices to the next sandwich.
- Food-safety basics: perishable sandwich components should be refrigerated promptly; don’t leave assembled sandwiches at room temperature for long periods.
