Herb-Glazed Stuffed Chicken Breasts with Crispy Potatoes

Stuffed chicken with a lively herb sauce is the kind of dinner that feels special without turning your weeknight upside down. Here, tender chicken is filled with a simple herb-cheese mixture, then brushed with an herb glaze and served alongside crunchy, browned potato cubes.
Recipe at a glance
- Yield: Serves 4
- Prep time: 25 minutes
- Cook time: 30 minutes
- Total time: 55 minutes
Ingredients
For the stuffed chicken
- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 1/2 teaspoon kosher salt, plus more as needed
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Stuffing:
- 4 ounces cream cheese, softened (or dairy-free cream cheese alternative)
- 1/4 cup finely chopped fresh parsley
- 2 tablespoons finely chopped fresh chives or green onion
- 1 tablespoon grated Parmesan (optional)
- 1 small garlic clove, grated (or 1/2 teaspoon garlic powder)
- 1 tablespoon lemon juice
- 2 tablespoons shredded mozzarella (optional, for extra stretch)
For the herb glaze / sauce
- 3 tablespoons unsalted butter (or olive oil for dairy-free)
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill or chives
- 1 teaspoon lemon zest
- 2 tablespoons chicken broth (or water)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
For the crispy potatoes
- 1 1/2 pounds Yukon Gold or red potatoes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 1/2 teaspoon dried thyme (or 1 tablespoon fresh)
Instructions
- Preheat and prep pans. Heat the oven to 400°F. Line a baking sheet with foil or use parchment. Set a second sheet pan or oven-safe skillet aside for the potatoes.
- Make the stuffing. In a bowl, mix cream cheese, parsley, chives (or green onion), Parmesan (if using), garlic, lemon juice, and mozzarella (if using). Stir until thick and spreadable. Taste and add a pinch more salt if needed.
- Butterfly and fill the chicken. Pat chicken dry. Using a sharp knife, slice a pocket into each breast (cut from the thickest side, stopping before you cut through). Season both sides lightly with salt and pepper. Divide stuffing among the breasts and spoon into the pockets. Press gently to close; it’s okay if a little stuffing shows.
- Season and start browning. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken (in batches if needed) and sear 2–3 minutes per side until lightly golden. The chicken doesn’t have to be fully cooked yet.
- Transfer to the oven. Move the skillet to the oven and roast until the thickest part registers 165°F on a thermometer, about 12–18 minutes depending on thickness. (This is the reliable doneness cue for poultry—color alone can be misleading.)
- Cook the potatoes for crisp edges. While the chicken roasts, cut potatoes into 3/4-inch cubes. Pat dry. Toss with olive oil, salt, pepper, paprika, and thyme. Spread on a sheet pan in a single layer, cut sides mostly touching the pan. Roast in the oven alongside the chicken (or use the second rack if needed) for 20–30 minutes, flipping halfway, until browned and crisp.
- Make the herb glaze. In a small saucepan over low heat, melt butter. Stir in parsley, dill (or chives), lemon zest, broth, Dijon, and garlic powder. Simmer 1–2 minutes. Turn off heat and season to taste.
- Glaze and rest. Once chicken reaches 165°F, remove from the oven. Rest 5 minutes (juices redistribute and the center finishes). Spoon or brush herb glaze over the tops right before serving.
Texture/doneness cues
- Chicken: internal temperature reaches 165°F at the thickest point. Juices should run clear.
- Potatoes: edges are browned and crisp; centers are tender when pierced with a fork.
Tips & variations
- Dairy-free option: Use dairy-free cream cheese (for stuffing) and olive oil instead of butter for the herb glaze. Choose dairy-free mozzarella only if you want it.
- Swap the stuffing: Replace herbs with chopped sautéed spinach and a spoonful of feta, or mix in minced sun-dried tomatoes for a tangy twist.
- More crispy potatoes: Don’t overcrowd the pan—use two sheet pans if necessary.
Serving ideas
- Serve with a simple salad (arugula + lemon vinaigrette) or steamed green beans.
- Garnish with extra chopped parsley and a squeeze of lemon for brightness.
Storage notes
- Cool promptly: Let chicken and potatoes cool to room temperature, then refrigerate within 2 hours.
- Refrigerator: Store leftovers in airtight containers for up to 3–4 days.
- Reheat safely: Rewarm chicken in a 350°F oven until hot (about 10–15 minutes). For potatoes, re-crisp on a sheet pan in the oven or in an air fryer for 6–10 minutes.
One more safety note
Chicken should be cooked to 165°F using a thermometer for safety and best texture. The USDA FSIS and CDC both emphasize thermometer-based doneness for poultry.
