- 1/4 teaspoon black pepper
- 1/3 cup chopped fresh parsley or cilantro
- 1 tablespoon lemon juice (or to taste)
- 2 to 4 tablespoons warm water or broth (as needed, for fluffing)
Skewers (choose a protein)
Use 1 to 1 1/2 pounds total, cut into 1 to 1 1/4-inch pieces.
- Option A: boneless chicken thighs or breasts
- Option B: sirloin or shoulder beef/pork
- Option C: shrimp (peeled, deveined, tails optional)
- Option D: extra-firm tofu, pressed if possible
- 2 tablespoons olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon smoked paprika (or sweet paprika)
- 1 teaspoon ground coriander (or 1/2 teaspoon cumin)
- 1/2 teaspoon black pepper
- 2 tablespoons lemon juice
- 2 tablespoons plain yogurt (optional, helps tenderize chicken/steak; use non-dairy yogurt if desired)
- 1 to 2 bell peppers, cut into 1-inch squares
- 1 red onion, cut into chunks
Note: For shrimp and tofu, skip the yogurt if you prefer. Keep any wet marinade separate from ready-to-eat items.
Quick tomato-red dipping sauce
- 2 tablespoons olive oil
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 1/2 cups crushed tomatoes (or passata)
- 2 tablespoons red wine vinegar (or apple cider vinegar)
- 1 teaspoon honey or sugar (optional, balances acidity)
- 3/4 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon chopped dill or parsley (optional)
Optional: crispy pita/flatbread bites
- 1 pita or 6 to 8 ounces flatbread, cut into bite-size pieces
- 2 tablespoons olive oil
- 1/4 teaspoon kosher salt
- 1/2 teaspoon za’atar (or oregano) (optional)
Optional: sauced “meatball-style” bites
- 1 pound frozen meatballs (or homemade), any flavor
- 1/2 to 3/4 cup tomato-red dipping sauce (from above)
- Chopped herbs or sliced pickled jalapeños/chiles (optional)
Instructions
- Make the sauce (can be done ahead): In a small saucepan, warm olive oil over medium heat. Add onion and cook 4 to 5 minutes until softened. Stir in garlic and tomato paste for 30 seconds. Add crushed tomatoes, vinegar, honey (if using), salt, pepper, and red pepper flakes (if using). Simmer 8 to 10 minutes, stirring, until slightly thickened. Stir in herbs if using. Texture cue: spoon should coat the back of a spoon. If too thick, loosen with 1 to 2 tablespoons water. If too thin, simmer 2 to 3 minutes more. Let cool; for best flavor, chill 20 minutes.
- Start the rice: If using already cooked rice, move to step 3. If cooking from dry, cook 1 cup dry long-grain rice according to package directions; fluff with a fork when done.
- Herbed yellow rice: Heat olive oil in a skillet over medium heat. Add diced onion and cook 4 to 5 minutes until translucent. Stir in garlic, turmeric, cumin, salt, and pepper; cook 30 seconds. Add cooked rice and toss gently to coat. Stir in parsley/cilantro and lemon juice. If the rice seems dry, add warm water or broth 1 tablespoon at a time until it’s fluffy and lightly saucy (not wet).
- Build skewers: If using wooden skewers, soak in water 20 to 30 minutes. Cut your chosen protein into 1 to 1 1/4-inch pieces. Toss protein with olive oil, salt, paprika, coriander, pepper, lemon juice, and yogurt (if using). Thread pieces onto skewers alternating with bell pepper and onion chunks. Food-safety cue: keep raw protein refrigerated until grilling, and don’t reuse marinade that touched raw meat unless you boil it first.
- Cook the skewers: Preheat grill to medium-high, or heat a grill pan to medium-high. Oil the grates/pan lightly. Grill skewers, turning as needed, until nicely charred and cooked through.
- Check doneness with safe internal temperatures:
- Poultry (chicken): cook to 165°F (74°C).
- Ground meat (if using ground-meat skewers): cook to 165°F (74°C).
- Whole cuts of beef/pork/lamb: aim for 145°F (63°C), then rest 3 minutes.
- Shrimp: cook until opaque and curled (temperature is typically around 120–140°F/49–60°C, but doneness cues matter most).
- Tofu: cook until hot throughout and browned to your liking.
Texture cue: chicken should feel firm and no longer look translucent; beef/pork should be juicy but not raw in the center.
- Optional: crisp pita/flatbread bites: Heat oven to 400°F (205°C). Toss bread pieces with olive oil, salt, and za’atar/oregano (if using). Spread in a single layer on a sheet pan and bake 8 to 12 minutes, flipping once, until crisp and lightly browned. Keep warm and serve soon for the best crunch.
- Optional: warm sauced bites/meatballs: Warm meatballs in a skillet or microwave until hot. Stir in enough tomato-red sauce to coat—start with 1/2 cup and add more if you want them saucier. Heat through.
- Serve as a platter: Spoon herbed yellow rice onto plates or a large platter. Arrange skewers on top and pass the tomato-red dipping sauce in small bowls. Serve crispy pita/flatbread bites on the side, plus a bowl of sauced bites for dipping.
Tips
- Make-ahead friendly: The sauce keeps well and gets better after chilling. Rice can also be cooked earlier and reheated gently with a splash of broth.
- Keep things safe on the grill: Keep raw skewers and any marinade separate from ready-to-eat items. Don’t let raw drippings touch your dipping sauce bowl.
- Variation: Swap turmeric rice for your favorite spiced rice (like saffron, curry powder, or even plain lemon rice). The sauce works with everything.
Serving ideas
- Top skewers with lemon wedges and a sprinkle of chopped herbs.
- Add sliced cucumber, cherry tomatoes, or a simple crunchy salad for contrast.
- For kids: keep chiles/red pepper flakes optional and offer sauce on the side.
Storage notes
- Cool quickly: Let rice, skewers, sauce, and any meatballs cool to room temperature no more than 2 hours after cooking, then refrigerate in sealed containers.
- Refrigerate: Store up to 3 to 4 days.
- Reheat: Warm rice in a skillet with a splash of broth, or microwave until hot. Reheat skewers gently so they don’t dry out (cover loosely). Reheat sauce on the stovetop or microwave, stirring.
- Bread bites: Best eaten fresh. If you must store them, re-crisp in a 375°F (190°C) oven for 3 to 5 minutes.
