Pretzel Bites Recipe
Ingredients:
- 3/4 cup warm water (around 105F)
- 3/4 tablespoon active dry yeast
- 3/4 teaspoon salt
- 2 eggs, beaten
- 1/4 cup honey
- 1/4 cup melted butter
- 3 1/2 cups all-purpose flour (plus more for dusting)
- 8 cups water
- 2 tablespoons sugar
- 1/4 cup baking soda
- 1 egg white for egg wash
- Fleur de sel (sea salt)
Instructions:
- In a large bowl, mix together the warm water and honey. Sprinkle the yeast over the mixture and let it stand until foamy (5 minutes).
- Stir in the melted butter, salt, and eggs.
- Add the flour and mix until the dough comes together in a shaggy ball. Knead the dough on a floured surface until smooth (several minutes). Place the dough in a lightly oiled bowl, cover with a cloth, and let rise in a warm place until doubled in size (90 minutes to 2 hours).
- Punch down the dough and roll it into 8 ropes, each about 3/4 of an inch wide. Cut the ropes into 1-inch pieces and place them on a tray or baking sheet. Cover with a towel and let rise for 30 minutes.
- Preheat oven to 425F. Boil 8 cups of water in a large pot. Once boiling, stir in 2 tablespoons sugar and 1/4 cup baking soda. Reduce heat to a high simmer and add 10 dough pieces at a time. Simmer for 1 minute, stirring occasionally. Remove with a slotted spoon and place on a parchment-lined baking sheet.
- Repeat with remaining dough pieces. Brush with egg white and sprinkle with fleur de sel. Bake for 15 minutes until deep chestnut brown. Remove from oven and cool on a wire rack.

Honey Sriracha Chicken Wings
Ingredients:
- 2 pounds chicken wings
- 2 tablespoons unsalted butter, melted
- 1 tablespoon vegetable oil
- 1 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh cilantro leaves
- Sesame seeds, for garnish
For the Honey Sriracha Glaze:
- 5 tablespoons unsalted butter
- 1 tablespoon all-purpose flour
- ¼ cup honey
- ¼ cup Sriracha*
- 1 tablespoon soy sauce
- Juice of 1 lime
Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- To make the glaze, melt the butter in a small saucepan over medium heat.
- Whisk in flour until lightly browned, about 1 minute.
- Stir in honey, Sriracha, soy sauce, and lime juice.
- Bring to a boil and simmer until slightly thickened, about 1-2 minutes.
- In a large bowl, combine the wings, melted butter, vegetable oil, garlic powder, salt, and pepper.
- Place the wings onto the prepared baking sheet and bake for 25-30 minutes, turning with metal tongs at halftime.
- Brush the wings with the Sriracha glaze and broil for 3-4 minutes or until crisp and crusted.
- Serve immediately, garnished with cilantro and sesame seeds if desired.
Buffalo Chicken Wontons Recipe (Makes 50-60 wontons)
Ingredients:
- 8 oz cream cheese, room temperature
- 3 large chicken breasts, cooked and finely shredded
- 1/4 cup blue cheese crumbles
- 1/4 cup Franks hot sauce
- 2 green onions, finely chopped (optional)
- 1 package wonton wrappers (50-60 sheets)
Instructions:
- Preheat oven to 400°F.
- In a large mixing bowl, combine the cream cheese, shredded chicken, blue cheese crumbles, hot sauce, and chopped green onions (if using). Mix until thoroughly combined.
- To assemble the wontons, place a damp paper towel over the wonton wrappers to prevent drying.
- Fill each wrapper with 1/2 tablespoon of the chicken mixture in the center. Gently rub a little water along 2 of the edges and fold the wrapper into a triangle. Press the edges to seal them.
- Fold one corner of the triangle into the center and the other corner on top of it. Secure the corners with a drop of water if necessary. Repeat the process with the remaining wrappers and chicken mixture.
- Place the wontons on a parchment-lined baking sheet and refrigerate for 15 minutes.
- Bake for 15-20 minutes until the outside is golden brown.
- Serve with celery and carrot sticks, and a side of ranch or blue cheese dressing.
Variations:
- You can use canned chicken, rotisserie chicken, ground chicken, or turkey as an alternative to cooking your own chicken.
- You can use any type of hot sauce you like, Franks is a classic, but you can try using your own hot sauce for a personal touch.
- Green onions are optional, but they add a little sharpness to cut through the richness of the mixture. If you don’t have any, you can use chopped celery instead or leave it out.
- If you want to be indulgent, you can fry the wontons in oil.
- The wontons can be made a day or two ahead of time, just store them in an airtight container with a slightly damp paper towel to keep them from drying out. You can even freeze them for later.
- If wrapping the wontons seems too much work, try making buffalo chicken dip instead. Use one less chicken breast and add some heavy cream or half and half to thin the mixture. Bake in the oven at 350°F for 20 minutes until bubbly and warm. Serve with pita or tortilla chips, carrots, and celery sticks.
