If you’re a fan of deep-frying, you may be wondering how many times you can reuse frying oil before it becomes unusable. The good news is that with a little care and attention, you can reuse frying oil multiple times, saving money and reducing waste. In this article, we’ll explore how to reuse frying oil safely and provide some guidelines for determining when it’s time to discard it.

First, it’s important to strain the oil after each use to remove any food particles or debris that can cause it to break down more quickly. Simply pour the cooled oil through a fine-mesh strainer or cheesecloth into a clean, dry container. Store the container in a cool, dark place until you’re ready to use it again.

To test the oil for signs of degradation, we conducted an experiment frying chicken and potato chips in identical Dutch ovens filled with canola oil. After each fry, we strained the oil and used a test kit that turns oil from blue to green in the presence of certain compounds that indicate degradation. The results showed that the fried chicken oil became progressively darker and stronger-smelling with each use, turning increasingly green in the test kit vials. However, we found that the oil was perfectly fine through four uses and only after the fifth batch did the chicken start to taste greasy and have off-flavors. In contrast, the potato-chip oil remained pale and clean-smelling and barely changed color in the test vials, producing identical chips through eight batches, at which point we stopped testing.

Based on these findings, we recommend reusing oil up to three or four times with breaded and battered foods. With cleaner-frying items such as potato chips, it’s fine to reuse oil at least eight times—and likely far longer, especially if you’re replenishing it with some fresh oil. However, it’s essential to use common sense and good judgment when reusing frying oil. If the oil looks or smells off, it’s time to discard it. Additionally, if you notice any foaming, smoking, or unusual bubbling during frying, stop using the oil immediately and discard it.
