Grilled Chicken Skewers with Vegetables and Salsa


Ingredients:

For the Chicken Skewers:

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into rounds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Bamboo skewers, soaked in water for 30 minutes

For the Salsa:

  • 2 tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • Salt to taste

For Serving:

  • Cooked rice
  • Fresh green onions, chopped
  • Black sesame seeds for garnish (optional)

Instructions:

1. Preparing the Chicken Skewers:

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, salt, and pepper.
