Fresh and Easy Chickpea Garden Wraps

These chickpea garden wraps bring together a creamy, lemony spread, crunchy vegetables, and leafy greens in soft flatbread. The chickpeas stay pleasantly chunky rather than turning into a smooth paste, giving each wrap a hearty bite. No stove or oven is needed, so this is an easy lunch to assemble at home or pack for a day out.

Equipment: A medium bowl, a fork or potato masher, a small bowl, and a cutting board. Use a clean kitchen towel or paper towel to dry the vegetables and greens well; excess moisture can make the flatbreads soggy.

Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon fine salt, plus more to taste
  • 1/8 teaspoon black pepper
  • 4 large soft flatbreads or wraps, about 10 inches each
  • 2 cups tender leafy greens, such as baby spinach or lettuce, washed and thoroughly dried
  • 1/2 medium cucumber, cut into thin matchsticks or small dice
  • 1 medium carrot, peeled and coarsely shredded

Dairy-free option: Replace the Greek yogurt with 1/3 cup plain, unsweetened dairy-free yogurt. Taste the spread before assembling and adjust the lemon, salt, and pepper as needed.

Instructions

  1. Make the chickpea filling. Put the drained chickpeas in a medium bowl. Mash with a fork or potato masher until most are broken up but small pieces remain. Stop before the mixture becomes a smooth puree; a chunky texture helps the filling hold together while still giving the wrap some bite.
  2. Season the filling. Add 1 tablespoon of the lemon juice, the olive oil, salt, and black pepper to the chickpeas. Stir until evenly combined. Taste and add a little more salt or lemon if you like.
  3. Mix the spread. In a small bowl, stir the yogurt with the remaining lemon juice. Season with a pinch of salt and pepper. The spread should be creamy and easy to swipe across a flatbread, not runny. If it is very thick, loosen it with a teaspoon of water.
  4. Prepare the flatbreads. Lay the flatbreads on a clean work surface. If they feel stiff or crack when bent, warm them briefly according to the package directions, then let them cool until comfortable to handle. Keep them covered with a clean towel while you work so they remain pliable.
  5. Fill each wrap. Spread about one-quarter of the yogurt mixture over the center of each flatbread, leaving a 1-inch border around the edges. Divide the chickpea mixture among the wraps, arranging it in a horizontal strip just below the center. Top with the greens, cucumber, and shredded carrot. Keep the filling in a compact line rather than piling it high.
  6. Roll sely. Fold the left and right sides of a flatbread inward over the ends of the filling. Bring the bottom edge up and over the filling, tuck it snugly, then roll away from you until the wrap is closed. Set it seam-side down. Repeat with the remaining flatbreads. Cut in half to serve, if desired.

Tips, serving, and storage

For an easy variation, add a little chopped fresh dill or parsley to the yogurt, or swap the cucumber for thinly sliced bell pepper. Choose a soft flatbread that bends without tearing, and avoid overfilling: leaving a clear border makes the wraps easier to roll and less likely to split.

Serve the wraps with apple slices, grapes, a simple green salad, or a cup of soup. For a lunch box, wrap each one snugly in parchment or reusable food wrap and keep it chilled until serving.

For the best texture, store the chickpea filling, yogurt spread, washed greens, and cut vegetables separately in covered containers in the refrigerator, then assemble shortly before eating. If you have assembled wraps left over, refrigerate them promptly in a covered container. USDA FSIS advises refrigerating perishable foods within two hours, or within one hour when temperatures are above 90°F, and using refrigerated leftovers within three to four days. The vegetables may soften as the wraps sit, so earlier is better for crunch.
