Recipe at a glance

  • Yield: Serves 2–4
  • Prep time: 15 minutes
  • Cook time: 8–12 minutes
  • Total time: 23–27 minutes

Ingredients

  • Scrambled eggs
    • 8 large eggs
    • 1/4 cup (60 ml) milk or half-and-half
    • 1 1/2 teaspoons kosher salt, divided
    • 1/2 teaspoon black pepper
    • 2 tablespoons unsalted butter
    • 1 tablespoon olive oil (optional for extra gentleness)
    • Optional add-ins: 1/4 cup finely chopped chives or parsley
    • Optional add-ins: 1/2 cup shredded cheese (cheddar, Monterey Jack, or feta), if you want a richer scramble
  • Avocado tomato mixed salad
    • 5–6 cups mixed greens
    • 1 ripe avocado, diced
    • 1 medium tomato, chopped (or sliced if you prefer)
    • 2 tablespoons red onion, very thinly sliced (optional)
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice (or red wine vinegar)
    • 1/2 teaspoon honey or sugar (optional, to balance)
    • Pinch of salt and black pepper, to taste
  • Toast/bread
    • 4 slices baguette or your favorite bread
    • Butter or olive oil for brushing (optional)

Instructions

  1. Make the salad dressing. In a small bowl, whisk olive oil, lemon juice (or vinegar), honey (if using), and a pinch of salt and pepper. Set aside.
  2. Prep the salad. In a large bowl, toss mixed greens with half the dressing. Add avocado and tomato, then drizzle with remaining dressing. Taste and adjust salt and pepper. (If serving right away, keep it lightly dressed so the greens stay crisp.)
  3. Whisk the eggs. In a medium bowl, whisk eggs, milk or half-and-half, 1 teaspoon of the salt, and black pepper until the yolks and whites look fully combined and smooth.
  4. Cook low and slow. Heat butter (and olive oil if using) in a nonstick skillet over low to medium-low. When the butter is melted and just foamy, pour in the eggs.
  5. Stir for soft curds. Let eggs sit undisturbed for 10–15 seconds, then gently push them around with a silicone spatula, folding from the edges toward the center. Keep stirring every 10–20 seconds, scraping the bottom so curds form evenly.
  6. Stop at glossy, creamy doneness. Cook until eggs are thickened into soft curds that look glossy but are not dry—about 8–12 minutes total. For food safety, egg dishes should reach a safe minimum internal temperature of 160°F. Remove from heat as soon as they reach that temperature.
  7. Add optional flavors. If using chives/parsley, fold them in at the end. If using cheese, sprinkle it in during the last 1–2 minutes and stir until melted.
  8. Toast the bread. While eggs finish, toast baguette slices until crisp and golden. Brush with butter or olive oil if desired.
  9. Serve as a breakfast plate. Spoon scrambled eggs onto plates, then add salad alongside (or on top of toast). Serve immediately.

Texture cues

  • Creamy: Eggs should look softly set and glossy, forming small-to-medium curds.
  • Too far: If the eggs look dry or stringy, they’ve cooked past the creamy stage—serve right away to minimize further drying.

Tips & variations

  • Make it extra tender: Use low heat and keep stirring gently. High heat makes curds tighten quickly.
  • Flavor swaps: Stir in cooked chopped spinach, smoked paprika, or a little grated garlic (about 1/2 teaspoon) at the end.
  • Salad swaps: If avocado isn’t ripe, use chopped cucumber and an extra spoon of olive oil–lemon dressing for a fresh crunch.
  • Family-friendly: Let kids assemble their own toast with eggs and salad.

Serving ideas

  • Top eggs with a pinch of flaky salt or cracked pepper right before serving.
  • Serve with sliced fruit (berries, orange, or melon) for a bright, balanced plate.
  • Optional: add hot sauce, lemon wedges, or a drizzle of extra olive oil to the salad.

Storage notes

  • Refrigerate: Store leftover scrambled eggs in a covered container in the refrigerator for up to 3 days. Keep salad separately if possible.
  • Reheat gently: Rewarm eggs in a skillet over low heat with a splash of water or milk (1–2 teaspoons per serving). Stir often until just heated through. The goal is creamy again, not rubbery.
  • Salad: Toss greens and dressing again only if needed; avocado may soften as it sits.
