  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • Juice of 1 lime
  • 8 flour tortillas, warmed

For Serving:

  • Sour cream
  • Salsa
  • Shredded cheese
  • Guacamole
  • Lime wedges

Instructions:

1. Preparing the Chicken and Vegetables:

  1. In a large bowl, combine the olive oil, chili powder, ground cumin, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  2. Add the sliced chicken, bell peppers, and onion to the bowl, tossing to coat evenly with the spice mixture.

2. Cooking the Fajitas:

  1. Heat a large skillet or grill pan over medium-high heat.
  2. Add the seasoned chicken and vegetables to the skillet. Cook, stirring occasionally, until the chicken is cooked through and the vegetables are tender, about 8-10 minutes.
  3. Squeeze the juice of 1 lime over the cooked chicken and vegetables, stirring to combine.

3. Assembling the Fajitas:

  1. Warm the flour tortillas in a dry skillet over medium heat or in the microwave.
  2. Divide the cooked chicken and vegetable mixture among the tortillas.
  3. Top with your favorite fajita toppings, such as sour cream, salsa, shredded cheese, and guacamole.

4. Serving:

  1. Serve the chicken fajitas with lime wedges on the side for squeezing over the top.

5. Storing:

  1. Refrigeration: Store any leftover chicken and vegetables in an airtight container in the refrigerator for up to 3 days. Keep the tortillas separate.
  2. Reheating: Reheat the chicken and vegetables in a skillet over medium heat until warmed through. Warm the tortillas before serving.

Tips:

  • For extra flavor, marinate the chicken in the spice mixture for 30 minutes to 1 hour before cooking.
  • Serve with a side of Mexican rice or refried beans for a complete meal.
  • Customize your fajitas with additional toppings like diced tomatoes, chopped cilantro, or pickled jalapeños.
