Ingredients
- 1 pound potatoes, peeled and diced
- 2 medium carrots, diced
- 1 pound frozen peas
- 3 tablespoons butter
- 3/4 teaspoon fine table salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried thyme
- 1 tablespoon lemon juice
- 1 cup water
Method
Recipe by Heather Schiefelbein.
- Cut the potatoes and carrots into ½-inch dice. Put them in a wide lidded saucepan with the water, salt and thyme. Bring to a simmer, cover and cook gently for 10–12 minutes, until just tender. Add a splash of water if the pan dries.
- Add the frozen peas and cook uncovered for 4–6 minutes, stirring gently, until hot throughout and tender. Most of the water should evaporate; if a deep pool remains, spoon some out.
- Stir in the butter, black pepper and lemon juice. Toss gently so the butter and remaining cooking liquid coat the vegetables without mashing the potatoes.
- Divide into 6 side portions, roughly 1 cup each. Taste before adding more salt.
Serving, useful notes and storage
This side already includes potatoes, so it can supply both vegetables and starch alongside meatloaf or roast chicken.
Reheat reserved vegetables gently in a covered saucepan with a spoonful of water until 165°F. A little butter can refresh the finish; this extra is not included in the estimate.
Refrigerate promptly in shallow containers within 2 hours (1 hour above 90°F), at 40°F or below. Use within 3–4 days of the original cooking day. Reheat only the portions needed to 165°F; reheating does not restart the storage clock.
Estimated cost per portion
Estimated ingredient cost: $3.50–$5.50 per batch, or $0.58–$0.92 per stated portion. Ingredient-use allowance: potatoes and carrots $1.25–$2; peas $1.25–$2; butter, lemon and seasoning $1–$1.50. Ingredient amounts used, including pantry seasoning; excludes companion dishes, tax and energy. Package purchases can cost more.
