Recipe at a glance

Yield: 4 servings (2 cutlets each, depending on size)

Prep time: 25 minutes

Cook time: 20–25 minutes

Total time: 45–50 minutes

Ingredients

  • Cutlets (choose one): 1 1/2 lb chicken cutlets or pork cutlets (or 12–16 oz store-bought breaded-style cutlets like turkey/veg cutlets)
  • Salt and pepper: 1 1/2 tsp kosher salt, plus more to taste
  • All-purpose flour: 1/2 cup
  • Eggs: 2 large
  • Milk (or water): 1 tbsp
  • Breadcrumbs: 1 cup (panko for extra crunch)
  • Seasonings for the crumbs: 1/2 tsp garlic powder, 1/2 tsp paprika (optional), 1/2 tsp dried Italian seasoning (optional)
  • Oil for cooking: 2–3 tbsp (for pan-frying) or use a light spray if baking
  • Fresh sprouts (microgreens or sprout mix): 4 cups, for topping
  • Quick creamy sauce:
  • 1 tbsp butter (or olive oil)
  • 2 tbsp minced shallot or 1 small shallot, finely chopped (or 1/2 tsp onion powder)
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1/3 cup sour cream (or plain Greek yogurt)
  • 1/4 cup grated Parmesan (optional, but great)
  • 1–2 tsp lemon juice (to taste)
  • 1/4 tsp black pepper

Instructions

  1. Set up the breading station. Pat cutlets dry with paper towels. Season both sides with salt and pepper. Set out three shallow bowls: (1) flour, (2) whisked eggs with milk, (3) breadcrumbs mixed with garlic powder and any crumb seasonings you like.
  2. Dredge, dip, then coat. Coat each cutlet lightly in flour (shake off excess), dip into egg (let excess drip), then press into breadcrumbs so they cling. For the crispiest crust, let coated cutlets rest on a wire rack for 5 minutes while you heat the pan or preheat the oven.
  3. Pan-fry (crispy option). Heat 2–3 tablespoons oil in a large skillet over medium heat. Add cutlets in a single layer. Cook 3–5 minutes per side, until deeply golden and the crust looks set (no pale wet spots). If your cutlets are thick, reduce heat slightly and cook a minute or two longer.
  4. Doneness cue (use temperature if applicable). Because cutlets can be made from different proteins, check the internal temperature with an instant-read thermometer. Use FoodSafety.gov’s safe minimum internal temperature chart as your guide. As a starting point: chicken should reach 165°F, and pork should reach 145°F with a 3-minute rest. Veg/plant-based cutlets will vary—follow package directions.
  5. Bake option (easier hands-off). Preheat oven to 425°F. Place cutlets on a wire rack set over a baking sheet (or a parchment-lined sheet). Lightly spray the tops with oil. Bake 15–20 minutes, flipping once halfway, until golden and crisp. Check temperature if using meat/poultry cutlets.
  6. Make the creamy sauce. While cutlets cook, melt butter in a small saucepan over medium. Cook shallot (if using) for 2 minutes until softened. Whisk in flour and cook 30–60 seconds to remove the raw flour taste. Slowly whisk in milk; simmer 2–4 minutes until thickened. Turn off heat and stir in sour cream (or yogurt), Parmesan (if using), lemon juice, and black pepper. Taste and adjust with more lemon, salt, or pepper.
  7. Assemble. Spoon a little sauce onto each plate. Place cutlets on top, then add more sauce if you like. Finish with a generous handful of sprouts so they stay crisp and bright.

Tips for maximum crunch: Keep cutlets dry before breading. Press breadcrumbs firmly on the final coating. Cook on medium heat—too-hot oil can brown the outside before the inside is done; too-cool oil can make the crust greasy. Serve right away and add sprouts at the end so the greens don’t wilt.

Serving ideas: Pair with lemony roasted potatoes, a simple pasta salad, or steamed green beans. For a kid-friendly plate, serve sauce on the side so everyone can dip to their liking.

Swaps & variations: Try panko for crunch, or use finely ground breadcrumbs for a more tender crust. Prefer a lighter sauce? Use Greek yogurt and whisk in a splash more milk to thin. Plant-based? Use your favorite breaded cutlets and skip the temperature check—follow the package instructions.

Storage notes

Refrigerate: Store cooked cutlets and sauce separately in airtight containers. Keep refrigerated up to 3 days.

Reheat to protect the crust: Warm cutlets in a 350°F oven or air fryer until hot and crisp again (about 8–12 minutes, depending on thickness). Reheat sauce gently on the stovetop or microwave in short bursts, stirring often.

Don’t store sprouts on top: Keep sprouts separate and add fresh at serving time for best texture.
