Black Sesame Cheeseburgers with Pickled Onions, Melty Cheese, and Crispy Fries

Gourmet burger night at home doesn’t have to mean takeout. These black sesame cheeseburgers bring a bakery-style toasted bun, a classic melty-cheese moment, and tangy pickled onions. Pair it with crunchy oven fries for the full “burger + sides” spread—without complicated steps.

Ingredients

Burger patties

  • 1 1/2 lb (680 g) ground beef (80/20 or similar)

  • 1 tsp garlic powder (optional)
  • 4 slices cheese (cheddar, American, or a melt-friendly mix)

Black sesame buns

  • 4 black sesame burger buns
  • 2 tbsp unsalted butter, softened (or neutral oil)

Quick pickled onions

  • 1 medium red onion, thinly sliced
  • 1/2 tsp kosher salt
  • 1/2 cup (120 ml) apple cider vinegar
  • 1/4 cup (50 g) sugar
  • 1/4 cup (60 ml) water
  • 1/2 tsp black peppercorns (optional) or pinch of red pepper flakes (optional)

Crispy oven fries

  • 2 lb (900 g) russet potatoes (about 3 medium), cut into fries
  • 2 tbsp cornstarch
  • 2 tbsp olive oil (or neutral oil)
  • 1 1/2 tsp kosher salt, plus more to finish
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika (optional)

Simple burger sauce (optional)

  • 1/3 cup mayo
  • 2 tbsp ketchup
  • 1 tbsp dill pickle relish or finely chopped pickles
  • 1 tsp yellow mustard
  • 1–2 tsp pickle brine or water, as needed

Instructions

  1. Make quick pickled onions. In a heat-safe jar or bowl, combine sliced onion and salt. In a small saucepan, whisk vinegar, sugar, and water; warm over medium heat until the sugar dissolves. Pour over onions, add peppercorns or optional flakes if using, and let stand at least 20 minutes while you cook the fries and burgers. (Refrigerate any extra.)
  2. Heat the oven and prep fries. Heat oven to 425°F (220°C). Line a large baking sheet with parchment.
  3. Cut and coat fries for crispness. Pat potatoes dry. Toss with cornstarch, salt, garlic powder (and paprika if using), then drizzle with oil and toss again until evenly coated.
  4. Bake fries until golden and crisp. Spread fries in a single layer (use two trays if crowded). Bake 15 minutes, flip, then bake 10–15 minutes more, until browned at the edges and crisp. If you like extra-crisp fries, finish with 1–2 minutes under the broiler, watching closely.
  5. Form patties. Divide beef into 4 portions. Gently form into patties about the size of the buns. Season both sides with salt, pepper, and garlic powder (if using). Create a shallow dimple in the center of each patty—this helps them cook more evenly.
  6. Cook patties to safe doneness. Heat a skillet or griddle over medium-high heat. Cook patties about 3–5 minutes per side depending on thickness. Use a thermometer: ground beef should reach 160°F (71°C) at the thickest part. Avoid relying on browning alone.
  7. Melt cheese. During the last 1–2 minutes of cooking, add cheese to each patty. Cover loosely with a lid or foil to help it melt.
  8. Toast the buns. Butter the insides of the buns and toast cut-side down in a clean dry pan (or on the griddle) for 1–2 minutes until golden.
  9. Assemble. Spread sauce on the bottom buns if using. Add patties, pile on pickled onions (let excess liquid drip back into the jar), and top with the bun.
  10. Serve immediately. Plate with fries and extra pickled onions on the side.

Tips for best texture (and fewer burger hiccups)

  • Keep patties tender: Mix and form gently—overworking toughens ground beef.
  • Don’t crowd the pan: If the skillet is packed, patties steam instead of sear.
  • For extra-melty cheese: Choose a melt-friendly cheese and cover briefly while it melts.
  • Pickle balance: Taste a spoonful of the onions. If they’re too sharp, stir in 1–2 teaspoons water or sugar; too sweet, add a splash of vinegar.
