- Yogurt option: 3/4 cup Greek yogurt + 1 to 2 tsp chili-garlic sauce (or harissa) + 1 clove garlic, grated + pinch of salt
- Tahini option: 1/2 cup tahini + 1 to 2 tsp chili-garlic sauce (or harissa) + 1 clove garlic, grated + 1–3 tbsp warm water + pinch of salt
Instructions
- Marinate the chicken: In a bowl, whisk olive oil, yogurt, lemon juice, garlic, cumin, coriander, smoked paprika, turmeric (if using), salt, pepper, and chili (if using). Add chicken and toss until coated. Marinate at least 30 minutes at room temp (or refrigerate up to 24 hours).
- Start the fries: Heat oven to 425°F. Spread fries on a large sheet pan (use two pans if crowded). Toss with olive oil, 1 tsp salt, garlic powder (if using), and pepper. Bake 15 minutes, then flip. Bake another 8–12 minutes, until golden and crisp at the edges. Sprinkle with remaining 1/2 tsp salt if needed and keep warm.
