    • 2 tbsp tomato paste
  • Rice & seasonings
    • 1 1/2 cups short-grain paella rice (or arborio)
    • 4 1/4 cups seafood stock or chicken stock (hot)
    • 1/2 tsp saffron threads, crushed (or 1/4 tsp saffron-style seasoning)
    • 1 tsp smoked paprika (or sweet paprika)
    • 1/2 tsp kosher salt, plus more to taste
    • 1/4 tsp black pepper
    • 1/4–1/2 tsp crushed red pepper flakes (optional)
  • To finish
    • 1 lemon, sliced into wedges (plus more for serving)
    • 1/4 cup chopped fresh parsley
    • 3 tbsp extra-virgin olive oil

Instructions

  1. Prep the shellfish. Rinse mussels and clams under cold running water. Discard any with broken shells. For mussels and clams, keep them chilled while you prep the rest. (If any are already open and don’t close when tapped, discard.)
  2. Season the shrimp. Pat shrimp dry. Season lightly with a pinch of salt and black pepper. Set aside.
  3. Build the flavor base. Heat olive oil in a wide paella pan or large skillet over medium heat. Add onion (and bell pepper, if using). Cook 6–8 minutes until softened. Stir in garlic and cook 30 seconds. Add tomato paste and cook 1–2 minutes to deepen color.
  4. Toast the rice. Stir in rice and smoked paprika (and red pepper flakes, if using). Cook 1–2 minutes, stirring so grains are coated.
  5. Simmer with stock and saffron. Add hot stock and saffron. Bring to a steady simmer. Cook undisturbed 10 minutes.
  6. Add mussels and clams. Arrange mussels and clams on top (and partially submerge them in the rice). Continue cooking 10 minutes without stirring.
  7. Doneness cues for shellfish. Mussels and clams should open during cooking. Any that stay closed after cooking should be discarded. (If you’re not sure, give them a minute—then discard if they don’t open.)
  8. Cook the shrimp. Add shrimp in a single layer. Cook 6–8 minutes, until shrimp are opaque and just cooked through. Avoid overcooking—shrimp turn tough quickly.
  9. Finish with lemon and rest. Turn off the heat. Let paella rest 5 minutes so the rice settles and liquid absorbs. Scatter with parsley and add lemon wedges over the top. Taste and adjust salt if needed.

Rice texture check: The rice should be tender and flavorful, not crunchy. If there’s extra liquid, simmer 2–3 minutes more; if it seems dry before rice is tender, add a splash of hot stock and continue simmering.
