Sangria-style splash

  • 1 (750 ml) bottle dry red wine, chilled
  • 1/2 cup orange juice (fresh or store-bought)
  • 1/4 cup brandy or triple sec (optional)
  • 2 tablespoons honey or brown sugar (to taste)
  • 1 orange, thinly sliced
  • 1 lemon, thinly sliced
  • 1–2 cups sparkling water, to top

Instructions

  1. Prep the seafood: Scrub mussels until clean and set aside. Pat shrimp dry so they sear and don’t steam.
  2. Build the flavor base: Heat olive oil in a wide paella pan or large skillet over medium heat. Add onion, bell pepper, and a pinch of salt. Cook 6–8 minutes, stirring, until softened. Add garlic and cook 30 seconds.
  3. Toast the spices: Stir in smoked paprika and turmeric (and saffron, if using). Cook 20–30 seconds until fragrant.

  9. Finish and serve: Stir in chopped parsley (or sprinkle on top). Serve with lemon wedges and extra parsley.
