Gourmet-Style Veggie Pizza with Tomato, Greens, and Melty Cheese

Delicious gourmet pizza topped with fresh ingredients, featuring blocks of cheese in the background.

When you want pizza that tastes a little “restaurant” but stays totally doable at home, this gourmet-style veggie version hits the mark: a quick tomato-garlic base, juicy tomato pieces, tender greens, and plenty of melted cheese for that bubbly, browned finish.

Recipe at a glance

  • Yield: 1 large pizza (about 6 slices)
  • Prep time: 20 minutes
  • Cook/Bake time: 12–18 minutes
  • Total time: 32–38 minutes

Ingredients

  • 1 (12–14 inch) pizza crust (store-bought or homemade), preferably par-baked if your brand offers it
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, finely minced
  • 1 (14–15 oz) can crushed tomatoes
  • 1 teaspoon Italian seasoning (or 1/2 teaspoon dried oregano + 1/2 teaspoon dried basil)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional, for extra tomato depth)
  • 2 medium tomatoes, sliced into thin rounds and/or chopped (about 2 cups)
  • 8–10 cups baby spinach or chopped kale (about 4 packed cups; spinach cooks down)
  • 2 tablespoons water (for wilting greens, if needed)
  • 2 cups shredded cheese, such as mozzarella (or a mix of mozzarella and fontina/gruyère)
  • 1/2 cup grated Parmesan (optional but highly recommended)
  • 1 tablespoon chopped fresh basil or parsley (optional, for finishing)
  • Red pepper flakes (optional)

Instructions

  1. Heat the oven and prep your pan. Preheat oven to 500°F (or as high as your oven safely goes). Place a baking sheet, pizza stone, or pizza steel in the oven while it preheats. (A hot surface helps the bottom stay crisp.)
  2. Make the quick tomato base. In a small saucepan, warm 1 tablespoon olive oil over medium heat. Add garlic and cook 30–60 seconds until fragrant. Stir in crushed tomatoes, Italian seasoning, salt, pepper, and balsamic (if using). Simmer 6–8 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning. Turn off heat.
  3. Wilt the greens. Add greens to a skillet with 2 tablespoons water (only if using kale or if your greens are especially thick). Cook over medium heat, stirring, just until wilted and tender, 2–4 minutes. Press out any excess moisture if the greens look very wet.
  4. Assemble. Stretch or lay the crust on a piece of parchment (if using). Spread the tomato base in an even layer, leaving a 1/2-inch border for browning. Sprinkle in about 1/2 cup shredded cheese. Add tomato pieces in a single layer, then top with the wilted greens. Finish with the remaining shredded cheese and Parmesan if using.
  5. Bake. Carefully transfer the pizza to the hot surface in the oven. Bake 12–18 minutes until the crust is browned at the edges and the cheese is bubbling with some golden spots. If the top browns before the bottom is crisp, move the pizza to a lower rack for the final 1–2 minutes.
  6. Rest and slice. Rest 3–5 minutes before slicing. This helps the cheese set slightly so toppings don’t slide.

Doneness cues: The bottom should look dry and browned (not pale and wet), the cheese should be bubbling, and the tomato should look juicy but not watery.

Quick tips to prevent soggy pizza: (1) Thicken the tomato base on the stovetop so it’s not watery. (2) Wilt greens and squeeze out excess moisture. (3) Layer tomato and greens on top—avoid soaking the crust with extra sauce. (4) Use a very hot baking surface.

Serving ideas

  • Classic and bright: Serve with a simple arugula salad dressed with lemon and olive oil.
  • Family-style: Add garlic knots or toasted bread, plus a bowl of marinara on the side for dipping.

Storage notes

  • Refrigerate promptly: Cool leftovers to room temperature briefly, then refrigerate within 2 hours of cooking. Store in an airtight container.
  • How long: Enjoy within 3–4 days for best quality.
  • Reheat: Rewarm slices in a 375°F oven or toaster oven until hot and crisped around the edges (about 8–12 minutes). Avoid microwaving if you want the crust to stay crisp.

Variation / easy swap

Different greens, same idea: Swap spinach/kale for sautéed mushrooms (about 2 cups) plus spinach, or add thinly sliced roasted zucchini. Keep wet vegetables in check by sautéing and draining well before topping.
