Pan-Seared Pork Tenderloin with Asparagus and Cherry Tomatoes

For the Pork Tenderloin:
- 1 pork tenderloin (about 1 pound)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
For the Vegetables:
- 1 bunch asparagus, trimmed
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
For Garnish:
- Fresh microgreens or parsley
Instructions:
1. Preparing the Pork Tenderloin:
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper.
- Rub the mixture all over the pork tenderloin.
2. Searing the Pork:
- Heat a large ovenproof skillet over medium-high heat.
- Add a bit of olive oil to the skillet.
- Sear the pork tenderloin on all sides until browned, about 3-4 minutes per side.
3. Roasting the Pork:
- Transfer the skillet to the preheated oven.
- Roast the pork tenderloin for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let it rest for 5-10 minutes before slicing.
4. Preparing the Vegetables:
- While the pork is roasting, heat 2 tablespoons of olive oil in a separate skillet over medium heat.
- Add the asparagus and cook for about 5-7 minutes, or until tender but still crisp.
- Add the cherry tomatoes and cook for another 2-3 minutes, until they begin to soften and blister.
- Season with salt and pepper to taste.
5. Serving:
- Slice the pork tenderloin into medallions.
- Arrange the pork slices on a serving plate alongside the asparagus and cherry tomatoes.
- Garnish with fresh microgreens or parsley.
6. Storing:
- Refrigeration: Store any leftover pork and vegetables in separate airtight containers in the refrigerator for up to 3 days.
- Reheating: Reheat the pork in a skillet over medium heat or in a preheated oven at 300°F (150°C) until warmed through. The vegetables can be reheated in a microwave or in a skillet.
Tips:
- For additional flavor, you can add a splash of balsamic vinegar to the vegetables while cooking.
- Ensure the pork rests after roasting to allow the juices to redistribute, making it more tender.
- Serve with a side of mashed potatoes or a light salad for a complete meal.
