Ingredients:
2 cups (10 ounces) unbleached all-purpose flour
3/4 cup (5 1/4 ounces) granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon table salt
1 1/4 cups toasted walnuts, chopped coarse (about 1 cup)
3 very ripe bananas, soft, darkly speckled, mashed well (about 1 1/2 cups)
1/4 cup plain yogurt
2 large eggs, beaten lightly
6 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350 degrees F. Grease only the bottom of a regular loaf pan, or grease and flour the bottom and sides of a nonstick 9-by-5-by-3-inch loaf pan.
- In a large bowl, combine the flour, sugar, baking soda, salt, and toasted walnuts. Set aside.
- In a medium bowl, mix the mashed bananas, yogurt, eggs, melted butter, and vanilla extract with a wooden spoon.
- Lightly fold the banana mixture into the dry ingredients with a rubber spatula until just combined and the batter looks thick and chunky.
- Scrape the batter into the prepared loaf pan and bake for about 55 minutes, or until the loaf is golden brown and a toothpick inserted in the center comes out clean.
- Cool the banana bread in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
- Serve the banana bread warm or at room temperature.
