Ingredients:

2 cups (10 ounces) unbleached all-purpose flour
3/4 cup (5 1/4 ounces) granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon table salt
1 1/4 cups toasted walnuts, chopped coarse (about 1 cup)
3 very ripe bananas, soft, darkly speckled, mashed well (about 1 1/2 cups)
1/4 cup plain yogurt
2 large eggs, beaten lightly
6 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350 degrees F. Grease only the bottom of a regular loaf pan, or grease and flour the bottom and sides of a nonstick 9-by-5-by-3-inch loaf pan.
  2. In a large bowl, combine the flour, sugar, baking soda, salt, and toasted walnuts. Set aside.
  3. In a medium bowl, mix the mashed bananas, yogurt, eggs, melted butter, and vanilla extract with a wooden spoon.
  4. Lightly fold the banana mixture into the dry ingredients with a rubber spatula until just combined and the batter looks thick and chunky.
  5. Scrape the batter into the prepared loaf pan and bake for about 55 minutes, or until the loaf is golden brown and a toothpick inserted in the center comes out clean.
  6. Cool the banana bread in the pan for 5 minutes, then transfer it to a wire rack to cool completely.
  7. Serve the banana bread warm or at room temperature.
