Ingredients
- 2 (15-ounce) jars assorted mixed olives, brined (about 2 lb total), drained
- 1 tablespoon extra-virgin olive oil, plus more for topping if needed
- 4 cloves garlic, thinly sliced
- 1 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon black peppercorns, lightly crushed (or 1/2 teaspoon ground black pepper)
- 1 tablespoon fresh rosemary, thyme, or oregano leaves (or 1 teaspoon dried)
- 1 small bay leaf
- 1/2 cup water
- 1/3 cup red wine vinegar (or balsamic vinegar)
- 1 tablespoon lemon juice
- 1 tablespoon honey or brown sugar (optional, to round out the bite)
- Kosher salt, to taste (usually not needed if the olives are salty)
Method
Recipe by Heather Schiefelbein.
- Drain and rinse the olives. Drain the olives well. Rinse briefly under cool water to remove some surface brine; drain again. (This helps the final mixture taste balanced rather than overly salty.)
- Warm the brine base. In a small saucepan over medium-low heat, warm 1 tablespoon olive oil. Add garlic, red pepper flakes (if using), crushed peppercorns, herbs, and bay leaf. Cook for about 30–60 seconds, just until fragrant.
- Simmer briefly. Pour in water, vinegar, and lemon juice. Stir in honey if using. Bring to a gentle simmer and cook for 3–5 minutes. The mixture should smell tangy and herbal; it doesn’t need to reduce a lot.
- Cool slightly. Remove from heat and let the brine cool for 10 minutes so it won’t be steaming hot when you combine it with the olives.
- Marinate. Add rinsed olives to a bowl or jar with a lid. Pour in the warm brine and stir to coat. Taste one olive: it should be a little “bright,” because it mellows as it chills.
- Chill until integrated. Cover and refrigerate at least 3 hours. For best flavor, marinate overnight.
- Adjust and serve. Before serving, taste again. If it needs more balance, add a small pinch of sugar (or a squeeze of lemon) to round out acidity, or a little extra vinegar for extra zip. Remove the bay leaf if you prefer.
- Texture/flavor cue: When they’re ready, the olives taste evenly seasoned from bite to bite (not just sharp on the surface), and the garlic-herb aroma is noticeable without tasting harsh.
Serving, useful notes and storage
Make the stated batch and portion it before serving. Keep perishable fillings, dairy and prepared toppings refrigerated; assemble crisp or fresh components close to serving.
Refrigerate perishable leftovers promptly in shallow covered containers, within 2 hours (1 hour above 90°F). Keep at 40°F or colder and use within 3–4 days, or any shorter period stated for this dish. Reheat cooked leftovers to 165°F; bring soups and sauces to a boil. Reheating does not restart the storage time.
