Instructions

- Mix the onion coating. In a bowl, whisk flour + cornstarch + salt + garlic powder + smoked paprika (if using) + pepper. Dip chilled onion rings into the dry mixture, press lightly, then set on a rack for a few minutes while you prep fries and nuggets.
- Prep fries (for extra crunch): Peel potatoes. Cut into 1/4-inch sticks. Soak in cold water with salt for 30 minutes, then drain and dry extremely well (pat dry thoroughly). Toss fries with cornstarch, garlic powder, and paprika (if using). This helps them crisp instead of steaming.
- Prep nugget-style bites. Cut chicken into 1 1/2-inch pieces. In a bowl, whisk buttermilk + egg. In a second bowl, mix flour + cornstarch + salt + onion powder + garlic powder + smoked paprika (if using) + pepper. Dip chicken pieces into the wet mixture, then dredge in dry coating, pressing so crumbs cling. Let the coated pieces rest on a rack while oil heats.
- Heat the oil. Fill your pot/Dutch oven with 2 1/2–3 inches oil. Heat to 350°F (175°C). (Use a thermometer if you have one.) Keep the oil near target temp; adjust burner as needed.

- Re-crisp fries (recommended for max crunch). Raise oil to 375°F (190°C) and fry fries again for 1 1/2–2 1/2 minutes until deep golden. Salt lightly and drain on the rack.
- Hold hot safely and serve fast. Place rack batches in a 200°F (93°C) oven while finishing the rest. Fried foods lose crispness quickly—plan to serve within 15–30 minutes of the last batch coming out. Don’t leave fried food sitting out at room temperature.
Quick texture notes: Onion rings should look deeply golden with no pale spots. Fries should be crisp and feel “dry” on the outside. Nugget-style bites should have a firm, crackly crust and fully cooked center.
Tips & Variations
- One oil, multiple items: The biggest timing trick is re-crisping fries at the end. Onion rings and nuggets can finish around the same window; fries benefit from a second round for crunch.
- Substitution: Swap chicken for boneless turkey or use firm tofu nuggets (press well, and keep wet coating a little thicker to help adherence).
