Ingredients
- 4 large eggs
- 1 tbsp distilled white vinegar (for poaching)
- 4 cups mixed leafy greens (baby spinach, arugula, or spring mix)
- 1 tbsp olive oil
- 1 small garlic clove, finely grated (or 1/2 tsp garlic powder)
- 1/2 small lemon, juice (about 1 1/2 tbsp)
- 1/2 tsp kosher salt, plus more to taste
- 1/4 tsp black pepper, plus more to taste
- 1 ripe avocado, halved, pitted, and sliced
- Sesame-herb topping:
- 1 tbsp sesame seeds
- 1 tbsp chopped fresh herbs (dill, chives, or parsley)
- 1 tbsp toasted breadcrumbs or crushed plain crackers (optional, for crunch)
Method
Recipe by Heather Schiefelbein.
- Prep the greens and topping: Rinse greens well and spin dry. In a small bowl, stir together sesame seeds, chopped herbs, and (if using) breadcrumbs. Set aside.
- Cook the greens: Heat olive oil in a skillet over medium-low. Add garlic and cook 30 seconds (don’t brown). Add greens, salt, and pepper. Cook, tossing, until just wilted, 1–2 minutes. Squeeze in lemon juice and toss again. Keep warm off the heat.
- Poaching setup: Fill a wide saucepan with 2–3 inches of water. Bring to a gentle simmer—bubbles should be steady but not violently rolling. Stir in vinegar.
- Poach the eggs (for safer doneness cues): Crack one egg into a small cup or bowl. Create a gentle whirlpool in the simmering water with a spoon, then slide the egg into the center. Repeat with the next egg if your pan can comfortably hold them without crowding. Poach until whites are fully set and the yolk has thickened but is not runny—about 3–4 minutes for a firmer yolk, 2 1/2–3 minutes for a softer set. Use a slotted spoon to lift eggs out; drain briefly on a clean towel or paper towel.
- Assemble the plates: Divide warm greens between two plates. Top each with avocado slices, then place two poached eggs on top.
- Finish: Sprinkle with the sesame-herb topping. Serve right away.
Serving, useful notes and storage
Reserve portions before serving. Keep any dressing, crisp bread, garnish and uncooked salad separate. For later meals, reheat only the cooked portion you need and prepare fresh finishing ingredients at serving time.
Refrigerate perishable leftovers promptly in shallow covered containers, within 2 hours (1 hour above 90°F). Keep at 40°F or colder and use within 3–4 days, or any shorter period stated for this dish. Reheat cooked leftovers to 165°F; bring soups and sauces to a boil. Reheating does not restart the storage time.
For food safety, cook eggs until the whites and yolks are firm. Use pasteurized eggs if deliberately serving a softer center; people at higher risk should choose fully cooked eggs.
Whites: should be completely opaque and set (no translucent jiggle). Yolks: aim for a thickened center that won’t pour like liquid; if you prefer a more set yolk, poach closer to 4 minutes.
Work quickly: Poached eggs are best immediately. Have plates ready before you start poaching. Keep water at a gentle simmer: Rolling boil can break eggs and make whites spread. Use vinegar wisely: Vinegar helps the whites coagulate faster for cleaner shapes.
