  • 1 cup cherry tomatoes or grape tomatoes, halved
  • 1/4 tsp kosher salt, plus more to taste
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika (optional)
  • 1–2 tbsp tomato paste (optional, for extra body)
  • 1–2 tbsp lemon juice or red wine vinegar
  • 1 small garlic clove, grated (or 1/2 tsp garlic powder)
  • 2–3 tbsp chopped parsley (optional)
  • Optional: 1/4–1/2 tsp Aleppo pepper or red pepper flakes for heat

Instructions

Make Dip 1

  1. Mix: In a medium bowl, stir together yogurt, garlic, olive oil, lemon juice, dill/parsley, salt, and pepper (and dried mint if using).
  2. Texture check: For a dipable consistency, it should be thick but still spoonable. If it seems tight, mix in 1–2 teaspoons water or extra lemon juice.
  3. Chill: Cover and refrigerate at least 30 minutes for best flavor.

Make Dip 2

  1. Blend: Add roasted peppers, walnuts, tomato paste, lemon juice, olive oil, smoked paprika, and salt to a food processor.
  2. Pulse to your texture: Pulse until smooth or gently chunky. Add 1 tablespoon water at a time if it’s too thick.
  3. Tune it: Taste and adjust salt and lemon. For a glossy spread, drizzle in a touch more olive oil.
  4. Rest (optional but helpful): Refrigerate while you make the third dip.

Make Dip 3

  1. Cook the tomatoes: In a small skillet over medium heat, warm olive oil. Add shallot (or onion) and cook 3–4 minutes until softened.
  2. Simmer: Add tomatoes, salt, cumin, and (if using) smoked paprika. Cook 8–10 minutes, stirring occasionally, until tomatoes collapse and the mixture looks saucy.
  3. Blend: Transfer to a blender or food processor. Add garlic, lemon juice (or vinegar), and tomato paste if using. Blend until thick and spreadable.
  4. Consistency cue: The spread should mound slightly on a spoon—loosen with 1–2 teaspoons water if needed.
  5. Cool: Let cool to room temperature before assembling the board (then refrigerate any leftovers).

Assemble the mezze board

  1. Portion: Spoon each dip into small bowls. Add a small pile of black and green olives in separate bowls.
  2. Finish: Add cheese cubes around the dips. Garnish with parsley and a light drizzle of olive oil if you like.
  3. Board layout: Place the creamy dip on one side, the smoky spread in the middle, and the tomato/pepper spread on the other side. Intermix olives and cheese so there’s no “empty zone.”
  4. Serve with scoops: Set out warm pita wedges and crunchy vegetables (cucumber coins, carrots or celery sticks, and cherry tomatoes).

Quick tips & variations

  • Swap the yogurt: Labneh (thicker strained yogurt) works great—reduce lemon slightly if it’s tangy.
  • Nut-free option: Replace walnuts with sunflower seeds for the same creamy bite.
  • Cheese swaps: Feta, creamy goat cheese, or a mild brined cheese all work—choose what your family likes.
  • Make it smoother or chunkier: Pulse Dip 2 less for a chunky texture, more for a silky spread.

Serving ideas

  • Family snack night: Put pita, cucumbers, and crackers in bowls so kids can scoop easily.
  • Lunchbox-friendly: Pack olives and cheese separately from dips to keep everything tidy and fresh.
  • Warm pairing: Serve with grilled or toasted pita and lemon wedges for a bright finish.

Storage notes

  • Refrigerate promptly: Store leftover dips and cheese in sealed containers in the refrigerator (aim for 40°F / 4°C or below).
  • How long: For best quality, use within 3–4 days.
  • Serving temperature: If serving a board, keep dips chilled until the moment people scoop—set out small bowls and refill as needed.
  • Re-stir: Dip 2 and Dip 3 may thicken in the fridge—stir to loosen before serving.
  • Discard if off: If a dip smells or tastes “off,” or shows spoilage, throw it out.
