Slow Cooker Beef Pot Roast recipe

Ingredients:

  • 3-4 lb beef chuck roast
  • 2-3 cloves of garlic, minced
  • 1 onion, chopped
  • 3-4 carrots, peeled and cut into chunks
  • 2-3 potatoes, peeled and cut into chunks
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the beef chuck roast and sear it on all sides until browned, about 3-5 minutes per side.
  2. Remove the roast from the skillet and place it in the slow cooker.
  3. In the same skillet, add the onions, garlic and sauté until softened, about 5 minutes.
  4. Add the thyme, rosemary and sauté for 1 min.
  5. Pour the beef broth in skillet , bring it to a boil, then reduce the heat to low and simmer for a few minutes, until the sauce thickens.
  6. Pour the mixture over the roast in the slow cooker.
  7. Add the carrots and potatoes to the slow cooker.
  8. Season with salt and pepper, to taste.
  9. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the roast is tender and the vegetables are cooked through.
