Ingredients:

Oatmeal Cookie Bars

Ingredients:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups quick-cooking oats, divided

Directions:

Preheat oven to 350 degrees F. Line a 13-inch by 9-inch baking pan with parchment paper. Beat butter and brown sugar in a large bowl with an electric mixer on medium speed until creamy. Add eggs and vanilla; beat until well blended. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to butter mixture on low speed until well blended. Stir in 2 cups of the oats. Reserve remaining 1 cup oats for later.
Press dough evenly into the prepared pan. Sprinkle with the reserved oats. Bake for 25 minutes or until golden brown. Cool completely in pan on a wire rack. Cut into bars.

Directions:

Preheat oven to 350°F. Line a baking sheet with parchment paper.In a bowl, cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, then stir in molasses. In another bowl, whisk together baking soda, ginger, cinnamon, and cloves. Gradually add to butter mixture, mixing until just blended. Add flour in two batches, mixing until just blended.

Cranberry Fig Jam with Walnuts in Goat Cheese Wraps

Ingredients:

  • 1 12-ounce bag fresh cranberries
  • 1/2 cup diced dried figs
  • 1/4 cup finely chopped walnuts
  • 1/4 cup sugar
  • 1 tablespoon freshly squeezed orange juice
  • Zest of 1 orange
  • 1/2 teaspoon ground cinnamon
  • 8 ounces goat cheese, at room temperature
  • 4 10-inch flour tortillas


Preparation:

  1. In a medium saucepan over medium heat, combine the cranberries, figs, walnuts, sugar, orange juice, orange zest, and cinnamon. Cook until the cranberries pop and the mixture thickens, about 10 minutes.
  2. Spread each tortilla with 2 ounces of goat cheese. Place one quarter of the cranberry fig jam in the center of each tortilla and spread evenly. Roll up each tortilla tightly and cut in half crosswise. Serve immediately or wrap in plastic wrap and refrigerate for up to 4 hours before serving.

Molasses Cookies

Ingredients:

  • 1 cup (2 sticks) unsalted butter, at room temperature

Instructions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

Honey Caramelized Apples in a Jelly Roll with Lemon Cream Cheese Filling and Mint Leaves

Ingredients:

  • 6 large apples, peeled, cored and thinly sliced
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 8 ounces cream cheese, softened
  • 1/4 cup lemon juice
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon grated lemon zest
  • 24 mint leaves

Oven Method:

Preheat oven to 375 degrees F (190 degrees C).
Line a baking sheet with parchment paper and lightly grease with vegetable shortening.

    In a medium saucepan, melt sugar and butter over low heat until just combined.

Add apples and increase heat to medium-high, cooking for about 10 minutes or until apples are soft and caramel is golden brown. Remove from heat and let cool slightly.
Meanwhile, in a small bowl, beat together cream cheese, lemon juice, and mint leaves until smooth. To assemble the jelly roll, spread the cream cheese mixture evenly over the surface of the cooled dough. Arrange the caramelized apples on top, leaving a 1-inch border all around.
Roll up the dough jelly-roll style, starting at one long side and ending at the other. Pinch the seams together to seal.
Trim off any uneven edges and place the jelly roll, seam side down, on the prepared baking sheet.
Bake for 20 minutes or until golden brown.

Let cool slightly before serving.

In a large skillet, combine the apples, honey, cinnamon, ginger and allspice. Cook over medium heat for 10 minutes or until the apples are tender and the mixture is thickened. Cool slightly.
On a lightly floured surface, roll one jelly roll to a 12×10-in. rectangle. Spread with half of the cream cheese mixture to within 1/2 in. of edges. Arrange half of the apple slices over filling; sprinkle with half of the lemon zest. Roll up jelly-roll style, starting with a long side; seal seam and ends. Repeat with remaining jelly roll and filling ingredients except mint leaves. Cut each log into 12 slices; arrange on serving plates. Garnish with mint leaves if desired
